My name is Mike Jones, and I'm a barista at Third Rail Coffee right by Washington Square Park in New York City. I'm going to teach you some basic coffee-making skills.
Alright, I'm going to show you how to steam milk with an espresso machine. The wonderful thing about espresso is that besides just a straight shot and an Americano, there's a multitude of milk drinks you can make. But first you have to know how to steam it right, which is a little bit tricky. So this is the steam wand, and this turns it on. Some machines will have a button that you push, or a level that you pull, this one is a knob that rotates. You want to start out with high quality whole milk that's cold as well as a pitcher that's also cold. So we have that in there. Now there's a few motions that you're going to want to go through when doing this. The first is to submerge the tip of the steam wand just below the surface of the milk. Start off with the pitcher straight up, and then angle it, this way when you turn it on you'll create a whirlpool. The first thing you do when you turn it on is let a little bit of air in, but you only want to do this for a few seconds, otherwise you'll end up scorching the milk. Once you've let the air in, you sink the tip of the wand in and just let it whirlpool until it gets to the correct temperature. So now I'm going to steam this and show you how it should look. The first thing you always want to do is purge. There can be buildup of milk or water in the tip and you don't want that going into the milk. Alright, so again, I'm just going to let some air in. It's going to make a slight hissing sound, and then I'm going to make a whirlpool. Then again, always purge afterwards to get that milk out of there. So once you've steamed it, you can give it a couple knocks. You'll see that there's just a few bubbles in there. And then swirl it around to incorporate all that foam you just made. You'll see it's nice and glossy. This is called micro foam. If you see too many spidery bubbles, that means that you've either let too much air in, or not enough. Alright, that's perfect. And that's how you steam milk. - Хобби
*We just retired a 10 year old Keurig, similar to the new one **MyBest.Kitchen** the old one had a LCD display, but this new one seems like it is a little better as far as features. Turn it on, load it up, press the button and wait for the cup to fill. Much quieter than the old one. The amount*
Yumm microplastics.
It'd be nice if we saw a close up of the foam
Yeah..ahhh, im hating this video.
REmember watching this vid 2 years ago now I'm a barista :)
+Jon F he already has one
+Jon F no earning money while making a drink people love
if he get salary.. it is a real job mate!
U still a barista? It’s 5 years now
Nguyen ha chau he married and passed
camera angle sucks
purge without covering the wand. Wipe then purge. tip from an espresso machine mechanic. When covering while purging not all the milk comes out and gets trapped inside.
Exactly. So flush the line with a cup under the steamer. My question is that my steamed milk comes out watered down from the steam? What am I doing wrong?
He didn't fully cover the wand's tip, tho
@@jrt1776your machine might have issues with letting out too much steam. Are you purging it before you start to?
its so cool to watch your videos, im a barista at starbucks in south america im going to be a trainer now and never even thought in my life id be so involved with coffee lol but here i am, love to see your method...great vids
Hey I just got an espresso so machine and was wondering if you can share some of the recipes for drinks :)
Thank you for the video. It was helpful.
Thanks dude! Enjoyable presentation
I’m watch this guy for learning , and now I can make latte art :D heart
I've learned it at the Grind's Coffee Shop to show them how to steam the milk for every latte that you've and they enjoyed the most!
This guy is just the cutest! Thank you for the instructional! :)
cheers really informative,
Do you have a video on foaming the milk for lattes and cappuccinos?
Thanks I will try this
that machine is fast as fuck.
its so good, but i can study this video hehe. thankyou
Good, but there are gaps in the instructions. How much milk is in the pitcher? How long (in seconds are you doing each phase). Technical directions need to be explicit in even obvious areas.
These things are specific to the store that youre working for. Cup sizes can vary, even when its under the same name. The duration of each phase is different also depending on the machine. At my family restaurant, our machine takes at least twice as long to heat up the coffee as this machine. I've never seen a machine as fast as this one before, and I'm ALWAYS having coffee.
Though we always would want to most information as possible from to do videos, some things are just to broad to give a super detailed explanation =)
Kitty Vo Yes, I agree, and those are aspects of my point. These are the little details that need to be covered. You don't need to actually *perform* all of the versions, but you need to explain that the little versions exists. That's how to write instructions.
+Testing123 I started working at a cafe not many months ago and I'm slowly getting the hang of the barista machine, particulary steaming and pouring milk.
My boss told me that to know when the milk is done and the right temp, you hold your hand on the side of the pitcher, and once it gets uncomfortably hot, just before it starts hurting, the milk is done steaming.
+Testing123 I agree. Also how much water is in the machine reservoir to produce the steam? I don't work in a coffee shop, I'm doing this at home (and using a much smaller machine) so even those things that seem obvious are helpful for us newbies.
I'm a volunteer barista who is doing the milk what the guy meant was how much milk he was putting in the hug and he is right the bottom of the spout should it be poured upto otherwise you could spill your milk if too much or you will probably have tainted coffee if it goes under so you are meant to pour the mile to the inside bottom on the handle layout
ok thank you for the video, was helpful but i have a question.the steamer on your machine is very powerful comparing to the one i have at home(brevile barista),so how long or to what temperature do i have to steam it?
this is so hard for me i keep hearing the sound and by the time i place it correctly milk boils and goes everywhere
just let the purge wand burried inside the milk. you won't heard the sound anymore. you heard it because the tips of the wand still opened to air. so you need to take the purge wand deep into the milk.
Do you pull the lever/turn the knob before the steam wand is in the milk? You want the steam wand to be below the surface, before you begin steaming it
you're instruction is well thought out. perhaps it would be a bit better if we could see the milk in progress..... thanks
whooo? mike jones
There is a max temperature, though I find that 150 is the absolute maximum.
But personally, I like to stop after the steam seems to feel thick coming out of the pitcher.
Thanks Mike, by the way what brand of glasses do you have?
I like this video alotte!
hai sir i want to know about the steam presser how much in the machine
Mike Jones! WHAT? Mike Jones! WHAT? Mike Jones!
how do you do it with almond milk? does it work the same?
Thanks, I'm doing a college course on this.
should be full power for steam knob or half power only ?
great man.. you get it :)
How much pressure does the steam comes out of the nozzle?
when i steam the milk with my home espresso machine, there is only bubbles coming out the milk double size but its not thick as the video, i want it to be thick so how can i do that, is there any trick ?
He steamed it for 14 seconds not 30 I noticed and you also steam with the wand like he said straight down when it's on first then angle the wand to create the foam. With ours we do this then raise the wand gradually.
mikes joooones, mike jooooones
volcommerce who??
He's the guy in the video, he says it right in the beginning...
Back then hoes didn’t want him, now he’s steaming milk hoes all on ‘im
I have a silvia and when I try to steam skimmed milk the milk whirlpools and comes and out and everything's a mess. What am I doing wrong. The Tetra pack full fat milk does work okay though
Hi Mike jones, how can I let some ari in ? I don't really understand that. ?
Every thing is nice
He can make my coffee any day if he wants lol.
Today was my first day at Starbucks my trainer wasn’t that great. Thanks.
When you are making hundreds of coffee is a day with time pressure, is no longer art
impressive
on this kind of espresso machine, how do you know what is the current temperature of the steaming milk?
What temp should the milk be?
how do espresso machines work. ? are they basically french press?
everything is nice)):♥️♥️
Thanks mate! No more mugs of foam.
It helps of you can get ahold of an espresso machine that actually has a steaming wand long enough to be useful! I have yet to find one under $500.00 that is long enough to be useful for anything but making lather to shave with.
Can we use any kind of milk?
& thanks for help :)
Lol Mike Jones still tippin
My lecturer,Mr.Mike
steam and french press are the same?
So the tip of my machine's wand is one of those old-fashioned teflon cylinders with two tiny circles opposite each other, halfway. Should I employ the exact same method we learn in this video? i.e. Start by placing the tip of the wand on the surface of the milk and gradually go deeper? One mechanic said that with those old-fashioned wand tips, we should do the exact opposite. All suggestions welcome. Thanks!
Good
is that a La Marzocco machine?
Beauty 💖
Nice
What does it mean to let air in?
How long is a few seconds?
aw i have the same machine at my job :-)
Why does mine like make a really loud noise or is that normal
ANYONE KNOW THE SONG
my cheap delonghi machine doeesn't make steam like this ! also my milk nerver gets good ( think its my fault )
Legit expert lol
Bro just got a job at a caffé and noone brothers to explain me that shit, just judge me and remake it, glad I found someone to explain it ffs
nice
Bro tell me how long it takes to steam the milk? I always end up make lotsa foam for cappucino and always failed to make latte art steam plase help me
you are 'ripping' it too much, that paper tearing sound.. Keep it just below the top angling it .
for some reason my milk only gets hot, it doesn't foam... I changed to whole milk and same result
Alrighty then 😋☕🍰🌄
I don't know why this is the first video that comes up, they are not showing the actual steaming process. The guy is knowledgeable but still, it would be god to see what is happening
In our country we steaming the milk into the top then we moved the bubbles
same!
hey
I work in Australia and everyone here likes there milk steamed to 80 degrees Celsius which makes it not taste as nice and also i find less easy to make art from...any tips on working with over heated milk?
TheTravelingangel Actually I beg to differ on that impression. I also work in aussieland and we are always taught to steam the milk to 70 degrees Celsius max and all of the customers coming to the store like their coffee at that temp. It's really hard to work with over heated milk and it does not smell good either.
what is the correct temp ?
According to Nestlé, it's 80 degree celcius.
So steaming milk takes 12 seconds?
I couldn't really see inside the pitcher whilst steaming the milk
Coffee and tea please
How do you make it more foamy when making a capachino?
aerate it 6-8 sec
You can also put the tip in the middle of the cup
Put air into it until it gets to 40 degrees then bring up the pitcher and create the vortex and stop at 60 degrees bang the pitcher 3/4 times on the work top and swirl it and pour from the side of your pitcher not the nozzle of it you can get thermometers to stick on the side of the pitcher to measure the temperature
Mike jonnnnnnessss😂
Its so simple steam milk the same way for all coffes and the pouring is the main thing
So the steam wand releases hot air, or is it hot steam(water) that mixes with the milk?
Hot steam actually.
+shakirakashah you can't have cold steam, just saying.
I as barista also, why do you steam milk without thermometer? how do you could know their proper temperature that milk you steamed?
You will know if you a barista dude
+Vienry Alvindo i work as barista dude...
+hogan wijaya Im a barista too. This dude Vienry is a fuckboy. Thermometer makes things easier and more consistent.
+hogan wijaya i know you wrote this a month ago or so but the "no thermometer" way is pretty much just until the pitcher gets too hot to touch. Should put you around the ideal temperature for your espresso drinks.
Jakeishness as graduated from F&B service and hospitality management degree, they taugh me to give standarized taste to every customers will get, because their paid for it.. with thermo give accurate temperature to customer..
if you just use your hand to feel the heat, is it will consistent and accurate for around 50 customer in one hour?
in fact every hand of us will feel different heat, is relative and inaccurate..
Anybody knw what pitcher that is?

I've burned and spilled two milks when I tried it on my own :( can somebody please answer me is this normal for a newbie?
Yes. Try reading this page from Nisbets, a catering supplier in the UK: www.nisbets.co.uk/how-to-steam-froth-milk
@@BigHenFor The link explains everything much better. Thank you!
I just had to say this but my friends dad is named mike jones lol 😂
My question is?
How do you keep water/steam from going into the milk?
The water/steam goes in to the milk. That’s literally what ‘steaming milk’ means!
@@whitemat1
Why would I want watered down milk?
JR T Well, if you’re making steamed milk, you have to put steam in the milk. Steam is boiling water. If you just want hot milk, heat it up in a pan!
@@whitemat1
Yup! I have a milk frother that whips and heats milk. Thanks for the info.
I've always wanted to learn to steam milk from Anakin Skywalker.
Mine quickly starts to bubble over, and spills out. I have a really cheap machine, and a stainless steel pitcher only half full. I am using 2% milk. what am I doing wrong?
Maybe your steam wand position
You need to stabilize your hug so that the milk is textured consistently,
I get a layer of microfoam which all pours in first and I can never do latte art. What am I doing wrong?
You need to texturise the steamed milk before pouring. Give it a couple swirls until the top is polished looking/
Oh, I figured it out. I wasn't letting enough air in at the start. Thanks!
WHHOOOOO?????
MIKE JONES
Did he just steam fr 10sec??
2:24 😵
Who? MIKE JONES!!!
but there is a max temperature...dont steam it too hot....i like to stop at 130
I'm the worst bus boy that ever lived. I need this
My cup must suck or my wand probably isnt long enough because I just make hot milk with some bubbles...
Mike Jooooooooooones
Who?
wtf how fast is that machine
MIKE JONES
Thanks, very helpful. Although kind of gross to use that rag to clean the steam wand...
What else would you use?
Only if you use it for something else like wiping the floor! If its sole purpose is to clean the wand, it's fine.

i’ve been doing it wrong at work this whole time... oops
