The Chicken and the Egg: Mastering Japan’s Original Comfort Food
HTML-код
- Опубликовано: 21 фев 2017
- Oyakodon, or chicken and eggs over rice, may be one of Japan’s simplest comfort foods, but done right, it can also be the most satisfying. Tokyo’s Tamahide restaurant has been setting the bar for oyakodon since 1891. Through eight generations of perfecting this gooey, savory dish, Tamahide keeps a strong tradition alive, and owner Konosuke Yamada intends to it pass on to his children. As customers willing to wait two hours for a bowl can tell you, here the chicken and the egg BOTH come first.

Fact: The watery substance is not oil; it is a stock-based broth.
ohh thank you
You're welcome~~
Captain Chicken, Thanks for the info mate, I thought it was raw egg for a moment.
oh thank god, i almost say it's freakin disgusting to have that much oil on one bowl.
Min Eum oh ok thanks, I thought it looked greasy and gross but that makes it seem much better
The way that egg just sliiiides off that pan..... 👌👌👌👌🔥🔥🔥
Deante Green Yee boi he uses magnets at spice and that shit just sticks to the rice.
tyvek05 dont think thats all oil
tyvek05 no oil. bonito dashi based thinned sweet soy sauce
Or just simply a non-stick pan?
Geniuses in this section. Non stick pan, Google it.
Customer: what came first? Chicken or egg?
Chef: yes
Aaron Turner the chicken cuz u gotta cook it first
It will be chicken first. because when u buy it in the supermarket, it says "chicken egg", not "egg chicken". SOLVED
apparently rice, and then chicken and egg on top ^^
Never got that saying. It was the egg. Something else would go against everything we know about anything.
chicken first. adam and eve never started as babies don’t they?
What immense pressure to be born into a family like that. Imagine saying "I do not want to continue the restaurant."
Haha thats what happen to me although its not a restaurant more like a job thats been passed down since 1400 years ago and im gonna be the first in 33/34 generation thats saying no to this....
I hope my parents didnt kill me..😂
I've read somewhere on the Internet that it's a valid solution for a Japanese person to adopt another adult Japanese person with an appropriate mindset into the family. The family continues, the generations continue, the bloodline wasn't ever important.
Then you end up like the chicken lol
@@perfectman9988 if you don't mind me asking... What's the job?

Oyakodon is such a great recipe when you're living alone. I ran out of groceries about once every two months while I was in college, but I usually had an egg, some frozen chicken, onions, and rice lying around. The ingredients are essential for me in most of my cooking, so even if I ran out of everything else, as long as I had those, I still had a delicious meal. It's an incredibly simple dish anyone can make. The relief of finding enough stuff to cook with was seriously the best seasoning you could have asked for.
How do you usually make yours?
I would love to know.....

They bathe the chicken in her own children. Humans are savage.
Dionee Lee It's not like the chicken themselves are any better - they viciously devour any eggs that break, effectively cannibalising their own offspring.
I wouldn't speak so soon, some people eat drunken shrimp/scorpion, where said critter gets dunk in spirits so it's completely hammered, then the person eats them alive. I think I also read about this other dish where a fish is sliced alive so that the flesh is still on the body but in segments for easy chopsticks use and the person could eat the fish alive, but I'm pretty sure this dish was banned. Presumedly because of animal cruelty.
Humans are savage, lmao so is every parasite and predatory species on the planet.
" I will cook the innards of your children along with your cold corpses"

a heart warming reunion of a mother and her children
Warming is correct. The heart part not so much.
I wws gonna make a joke but you got it dammnit haha😀
That's cold, brah.
"Expanding the business, making profits - these are not my priorities." - THAT'S A GREAT BUSINESS MIND SET !!!!! SALUTE !!!!!
as54ot i think it's a great mind set but not a great business mind set lol
Stoned Sloth it is also business mind set actually. with only one store, your business can survive for years bcause your consumers will come to your only one store again and again. the profit is stable..
it is different when u open up several stores in the city. if one store is more profitable and another store is not profitable, then u must close that last store that not profitable. the profit maybe high, but the survivability is questionable.
dude, it depends you cant make the same business strategy in the 3rd world country like this, if we are talking about business, then it has so many factors to survive and success through years
Business minded or not, staying with only one store makes the dish extra special, instead of some chain restaurant where quality usually suffer as its harder to control other stores.
Sounds like the Ferrari strategy.
When I went to Japan, we go there ofcourse to eat this famous Oyakodon. It's a really precious feeling that you cannot express to yourself because it is so delicious. It is worth to fall in line for about an hour. But I knew something is wrong. "Wish the restaurant stay 50, 100 or 200 years more" The restaurant might be in danger because there's no kids, teenagers or young adults to eat it. Mostly elders. Wish they pass the tradition to eat this in their grandkids or children. So they come back for the next generation.
look like next generation really like junkfood and fastfood
@@SourthernerPilgrim thats cause food is a lot more available in those forms nowadays. that isnt a "next generation" problem. tis a problem that every generation went through. But as did previous generations. We all realize how important what we put in our bodies are.
I feel like the next generation is blamed more for the organic, healthy, vegan food trend than fastfood. so actually odd you blame them for junkfood (they aint the one manufacturing them)
I haven't really been anywhere out of my country yet. But im a person who will try evertyhing for the sake of ot. I just hate eating the same things over and over
Kiddos in japan love da mcdonalds and kfc
You can't force a whole generation to do something just because you don't want that to disappear.
I hope his business is not failing during this pandemic
I doubt it, Japanese culture is far too civilized to be shutting down. Worth admiring
it survived WW2 anyway
most businesses in japan are designed for locals market, not tourist
yeah cuz i haven't tried it yet xD
@@alien13579 Most businesses everywhere are designed for the local market, not tourists. And a heck of a lot of them have gone bankrupt during the pandemic.

This dish should be called "family reunion" or something like that.
i love his outlook, that he wants to preserve the business for future generations instead of just trying to make as much money as possible. great spirit
Cooking parents in their children
Nice.
actually, the eggs used in the dish are not it's children, because they aren't fertilized. Rather, it's basically a chicken sitting in it's period since while they where forming the egg for a chick, no fertilization took place.
Key you're fucked up in the head, but I love it for some reason

The greatness of this dish is in the emphasis of keeping the family together!
Two generations at once, what a meal
Oyakodon, one of the best tag of all time.
😳😳
To say this is a simple chicken & egg dish is an understatement...
How both the egg and chicken is prepared, the thought of the presentation and taste is different.
Japanese cuisine is so awesome, another reason to like even more Japan.
2 years ago I was diagnosed with an illness that left me without an appetite for months. The only thing I ever wanted to eat was oyakodon, after seeing it in a film. I cooked it just about every day for 3 months and got quite good at cooking it. It's a great meal to cook on a budget. I use my own sauce and furikake seasoning.
I absolutely love people who have this kind of pride in their work. They have a vision and a desire for quality over profits. Don't get me wrong, profits are great, but you can tell the difference between someone with passion for the work vs someone trying to make a buck.
Scelestus13 so true, good example "EA vs God of war 4 creators." Yea sorry
Your channel is the only place i learn things from.
watch this for the second time!! japanese food can always make my saliva production increase!!
Just made this at home for the 1st time and it was delicious! I used chicken thigh instead of breast meat and used a Hawaiian teriyaki sauce with chicken broth instead of dashi, next time I’m going to double the amount of eggs so it can fully cover the rice and have that beautiful velvety texture like I’m this episode 👍😁
Sounds delicious! I usually cook it following original recipe but now I am curious what it tastes like with teriyaki saice and chicken broth. I will try it soon.
Chicken Family reunited on a bowl of rice. NICE
This is one of the most memorable food I had in Japan. It's so good
i really like, that he changes the recipe according to his preferances and does not rigitly stick to the original, like some others
Love oyakodon. This restaurant you must try
this is the original without the onion and springs which I can't live without.
It's such a simple dish and yet it looks amazing to eat
Watching on parents and children's day brings a whole new meaning
When he mentioned that he was the 8th generation, I held my breath until he mentioned his son and grandson.

The term oyakodon can be applied to any kind of sexual activity including both the mother and usually daughter, and some other third party. In addition, the term bukkake means to splash, which is why it can describe the act of ejaculating on an individual and a certain preparation of udon noodles, known as bukkake udon.

Carbs / Protein/ and more protein baby !
bLiNgBooy Music protein? More like cholesterol xD... chicken fat/skin + egg yolk is pure cholesterol.
But tbh i would die for that cholesterol bowl :)
Victor Khan / yeah that too.
I was just trying to look at the bright side, Hehe. As long as you don't eat it everyday you should be good.
cholesterol isn't unhealthy at all because your body adjusts its own cholesterol production depending on how much you consume
Don't forget healthy fats from the egg yolk! All 3 macros in one meal!

Passing his vision instead of expanding the business. That's what I respect the most in term on Business.
This is amazing. I love Japanese culture of passing down the generation.
I wonder how they're doing during the pandemic. I hope they survive long enough for me to get the chance to visit.
Whether the chicken or the egg came first, both of them taste good

really wanted to eat this dish, but didn't get to try during my japan trip last year. but i had omurice!
It's quite good. When I went during a weekday, the wait was around 40 minutes. It was about $15-20 per bowl for what I was getting. I sat with 3 other strangers because it's not a particularly big place and they try to feed as many people as possible.
As someone who's allergic to seafood Oyakodon is not only one of my favorite Japanese dishes, but dishes period
this brings a new definition to 'a family meal'.
people: what came first chicken or eggs?
me: well first you cook the chicken and then add the eggs.....
I looked at the thumbnail and was like "Is it How To Basic once again ? "
simple dish yet amazing and loved by every japanese and now known by the world.
Well done, no branding, not a commercial for a beer company. Nice.
neat that the parent-child dish is being handed down through the generations, maybe that's their secret DOUBLE oka yo!
So people who visits japan and have trouble speaking japanese I bet they will say "Can I have a Parent child chicken egg rice please?"
Japanese food seems so simple to make, but to make it right requires mastery. F***ing LOVE Japanese food!
i made oyakodon for lunch yesterday, even the most basic, unartistic version that i cooked tasted so comforting
"Oya" means parent while "Ko" means child.

Many dishes are actually incredibly simple to make. Furthermore, chefs that want to demonstrate their skill rarely make something incredibly complex. The most common test of skill is preparing simple egg dish. The more instructions/ingredients, the harder to really mess up; the fewer steps/ingredients the more apparent the skill.
It's not really omelette per se, since you cook both the chicken and egg in a soy-sauce based broth. So it's like poached scrambled eggs, it's just that they cooked it until almost all the broth was absorbed by the chicken and eggs. Other places usually keep the eggs runny with more broth in it.
so much dumb people in the comments saying "its just egg"
Oyakodon and tamagoyaki are my fav Japanese food ever
こんな長い歴史があるなんて知らなかったのでびっくりしました!美味しそう、食べたいです
To those that admire how easily the egg slides on to the bowl bowl of rice, actually the egg is "scrambled" on the sauce, not "sauce on the egg".
You can see that for oyakodon, often they cook the sauce first before drizzling the egg mixture
I learned almost nothing about the dish
Well if you watched it you can learn from it.
