    Lychee & Rose Cake (6-inch)
    Cake base:
    (for chiffon cake tutorial and recipe: • Soft and Fluffy Chiffo... )
    6-inch Chiffon Cake 1
    Rose paste:
    Rose powder 2g
    Whipping cream 30g
    Filling:
    Lychee (frozen/fresh/canned) 150g
    Whipping cream 180g
    Icing sugar 11g
    Icing:
    Whipping cream 165g
    Icing Sugar 10g
    Pink coloring
    Lychee Jelly:
    Lychee (frozen/fresh/canned) 45g
    Water 20g
    Granulated sugar 8g
    Gelation sheet (220 bloom) 2g
    Decoration:
    Edible dried rose petals & gold flakes
    Cake base:
    1. Bake a 6-inch chiffon cake in advance.
    2. Slice cake into 3 equal slices, about 1.5cm thick.
    Rose paste:
    1. Combine rose powder and whipping cream in a shallow container, mix with spatula until you get a smooth paste without any lumps. Set aside.
    Filling:
    1. Cut lychee into small pieces (if you can’t get fresh lychee, just use frozen or canned lychee).
    2. Add sugar to whipping cream, whip with medium speed until 50%, add ½ of the rose paste.
    3. Continue whipping until stiff peak (90%).
    4. Place a smear of whipped cream on a cake board, place a slice of chiffon cake in the center of the cake board, scoop some whipped cream on to the cake, smooth it evenly with a palette knife.
    5. Add half of the lychee onto the cake, scoop about a cup of whipped cream over the lychee and smooth it evenly.
    6. Stack with another slice of chiffon cake, repeat by topping it with whipped cream, smooth it evenly, add the remaining lychee and top with whipped cream and smooth the cream.
    7. Stack with another slice of chiffon cake and crumb coat the cake with remaining whipped cream.
    8. Freeze the cake for at least 1 hour.
    Icing:
    1. Whip whipping cream with icing sugar to 50%, add the remaining rose paste and continue whipping till 70%-80%.
    2. Add a little pink coloring and mix till well combined.
    3. Remove cake from freezer, ice cake with whipped cream, smooth the surface with soft plastic scraper.
    4. Refrigerate the cake.
    5. Whip the remaining cream until stiff, transfer the cream to a piping bag with Korea piping tip No.95.
    6. Pipe the cream over the edges of the cake.
    7. Freeze the cake for 1 hour.
    Lychee Jelly:
    1. Soak gelatin sheet in cold water for 10 minutes.
    2. Blend lychee and water in a blender, strain lychee juice.
    3. Add sugar to lychee juice and cook until sugar melted, continue cooking until the mixture starts to boil, remove from heat.
    4. Remove gelatin sheets from cold water, squeeze out excess water, add gelatin to lychee mixture, stir until melted.
    5. Let it cool down to room temperature.
    6. Remove cake from freezer, pour jelly mixture over the top of the cake.
    Decoration:
    1. Decorate with gold flakes and edible dried rose petals.

    蛋糕体:

    玫瑰糊:
    玫瑰粉 2g
    淡奶油 30g
    夹馅:
    荔枝(新鲜/冷冻/罐头) 150g
    淡奶油 180g
    糖粉 11g
    玫瑰奶油:
    淡奶油 165g
    糖粉 10g
    粉色色素
    荔枝果冻:
    荔枝(新鲜/冷冻/罐头) 45g
    水 20g
    细砂糖 8g
    吉利丁片(220 Bloom) 2g
    装饰:
    可食用玫瑰干花瓣和金箔
    蛋糕体:
    1. 提前烤好6寸戚风蛋糕。
    2. 蛋糕切成3片,每片大约1.5厘米厚。
    玫瑰糊:
    1. 在一个浅盘里加入玫瑰粉和淡奶油,搅拌至糊状,顺滑没有颗粒。
    夹馅:
    1. 把荔枝切成小块(买不到新鲜荔枝,可以用冷冻或罐头荔枝替代)。
    2. 淡奶油加糖粉打发至5分,加入1/2的玫瑰糊。
    3. 继续打发至9分。
    4. 蛋糕底板上抹点奶油,把蛋糕片放在底板中间,涂上一层薄薄的奶油, 抹平。
    5. .铺上一半的荔枝,涂上奶油,抹平。
    6. 叠上另一块蛋糕片,重复以上步骤。
    7. 叠上最后一片蛋糕,用剩余奶油涂满蛋糕打底。
    8. 冷冻一个少时。
    玫瑰奶油:
    1. 淡奶油加糖粉打发至5分,加入剩余玫瑰糊,继续打发至7-8分。
    2. 加点粉色色素,搅拌均匀。
    3. 把蛋糕从冷冻取出,表面抹上奶油,最后用透明软刮板抹平表面。
    4. 冷藏备用。
    5. 剩余淡奶油打发至硬挺,装入裱花袋,花嘴型号是韩国95号花嘴。
    6. 把奶油挤到蛋糕上。
    7. 冷冻一个小时
    荔枝果冻:
    1. 吉利丁片泡冷水10分钟。
    2. 荔枝和水搅拌成汁,过筛。
    3. 加细砂糖,煮至糖融化,继续煮至沸腾,熄火。
    4. 吉利丁片控干水分,加入荔枝汁中,搅拌至融化。
    5. 冷却至室温(太烫的话会把蛋糕的奶油给融化)。
    6. 取出蛋糕,浇上果冻。
    装饰:
    1. 用金箔和可食用玫瑰花干花瓣装饰。

    You used dairy whipping cream, so how long does this cake keep shape in room temperature (32c) please?:( is it melting easily?

      Yes it melts easily, need to on aircond in the room. If not you have to replace the cream with topping cream or other cream but the taste will be different.

      Yes,but I have not tried rose essence,not sure how much rose essence is needed,maybe just a few drops.

      Yes,but I have not tried rose essence before,not sure the exact amount for rose essence,maybe just add a few drops and taste it to check if you need to add more.

      Yes, but maybe you need to adjust the amount of sugar according to the sweetness of the juice.

      Emborg 和 Elle & Vire,我比较喜欢Elle & Vire 但有时候买不到就买Emborg。如果你想要稳定性好,可以混一半的Millac淡奶油,Millac脂肪含量38% 可以提高奶油稳定性。

      Icing sugar will be added to whpping cream later,mixing a little whipping cream with rose powder to form a paste and then add them to whipping cream,by doing this you will get a smooth whipped cream,if you add rose powder directly to whipping cream and whip it,the rose powder will not dissolve easily and will cause a grainy texture whipped cream.

      Did you mean the rose powder?The rose paste is made with rose powder and whipping cream. I bought the rose powder on shopee.

      可以,糖粉里含玉米淀粉,可以吸收奶油里的水分,提高奶油稳定性。

    I have no idea how to keep whipping cream firm, they will turn sofe if I take out for more an hour. 😑

      Whipping cream cake has to be kept in the fridge,especially during summer. Only take it out from the fridge when you're ready to serve or eat them.

      Rose and lychee are perfect combo,I am using rose powder not artificial rose essence,they compliment each other quite well. There is a cocktail called rose and lychee martini,not sure if you have heard about it,it is not a weird combination,many people are using these 2 ingredients in their desserts and drinks.

      If you are using canned lychee,drain the syrup with a sieve and leave lychees in the sieve for a while before cutting them
