      Here are some interesting insights about arsenic and rice.
      1. Yes, arsenic is naturally found in the soil in some parts of India. Primarily, the Gangetic Plains, more so in Eastern India are reported to have higher soil arsenic.
      2. South, Central & to some extent North India reportedly has low levels of arsenic
      3. Pesticides and fertilizers are reported to be the biggest anthropogenic source of arsenic. In other words, rice cultivated organically and that too in South India, is likely to have lower levels of arsenic.
      That said, it is a tradeoff... Health benefits of the full bran rice vs lower arsenic in polished white rice.
      Rinsing the rice and cooking with more water (and draining excess water) is also reported to reduce arsenic levels. But draining excess water after cooking also results in loss of some nutrients. So again, it is a tradeoff.

    I have used a pressure cooker for many years and then I stopped. Can I decided I have to get back into eating the right way and bought a new pressure cooker old school no electric.       Is rice is unpolished,soak for atleast three hours. For pressure cooking, general one rice to three water,but for open mud pot cookiyou may need one rice to four water.     Good morning mam,a very very useful informative well detailed explanation.superb.pls do share about raw par boiled rice differences.im really confused to take in daily basis. nearly about 6 months I am taking traditional rices but confused to check to take raw rices because raw rice is heat and will create stomach upsets and pain I don't know it is superstitious belief or scientifically proven. please clarify. tq

      Raw rices do not cause any heat. Have not come across any such cases. Start with semipolished rice varieties. Once your stomach adjusts to this,you can switch to fully unpolished rices.       During recovery you can have Thooyamalli & Poongkar semi polished and well cooked so that you can digest it. However, if you have never had red rice before , this may not be a good time to start with red rice and ut will be better to have Thooyamalli semi polished rice.

    I have been buying Kerala red rice - Raktashali or Kavuna, and NE purple forbidden rice from Amazon. Those are said to be organic and parboiled. I recently also tried bamboo rice. As for brown rice I tried Dawat but I didn't like it as it felt heavy.

      Brown rice,due to its bran definitely has high fibre content and thus low glycemic index than white polished rice. Apart from using unpolished rices, physical activity is very important to be healthy. Brisk walking for atleast half hour daily. Regards Sujata from Munch and Mull

    Why not use the soaking water for cooking? It has all the B vitamins from the bran dissolved in it!
    Also pressure cooking for so long(4 whistles on high flame!) Will certainly destroy remains vitamins .
    The purpose of eating brown rice is defeated!

      There are different schools of thought about how to use soaking water. We go with the school of removing the soaking water that contains some of the phytates , which act as nutrient inhibitors. You can cook brown rice in a vessel , the rice just requires more pre soaking and more cooking time. Having said that, the benefits of eating brown rice is not negated by it being cooked in a pressure cooker .

      I agree with her. Soaking & pressure cooking is a tradeoff between cooking time and nutrient loss.
      By choosing brown/red rice over white rice you are choosing a higher nutrition product.
      So at the end, overall, you are still better off I feel 😊🙏
