The soaking helps get tiny debris out of the crevices, like miniscule rocks (which can easily chip a tooth). The same water-soaking method applies to things like lettuce, kale, etc. Most all restaurants do this and I thought it was very handy.

A few tips to make things easier, especially if you’re only making one portion. if you have trouble with your hands, use a knife instead of a fork to pierce the potatoes, you’ll get less resistance when you pull out the knife. I always start my potatoes in the microwave to save time. Depending on the size of the potato, around 8 minutes will make them mostly cooked. Obviously more potatoes will need more time. If you’re only doing a couple of potatoes, the air fryer is also excellent for baking potatoes. I usually put it on around 120° for about 50 minutes if I want to walk away and do other things. If you’re using a higher temperature, keep a closer eye on them so the skin doesn’t burn. Enjoy. x

@@Downshiftology using a strawberry/tomato corer (with all those tiny teeth around the edge) is a good way to scoop out the flesh of veggies. I even use mine to remove seed cores from zucchini and squash, etc.
Yes! Freeze them in a single layer on a sheet pan or plate before storing them away in a container with parchment paper in-between the layers, to prevent sticking.
Here's my make-ahead tip: Bake the potatoes and mix the filling a day in advance. Store the potato skins in one container and the mixed filling in a separate container in the fridge. Then, simply fill the potato skins and bake them the second time when you’re ready to serve them up.

I've been making twice backed potatoes for years using cottage cheese - more protein, less fat, still creamy and tasty

You could! But just be aware that sweet potatoes are much softer than russet potatoes, so the skin won't be as sturdy.

I believe by poking them makes them cook more evenly. Maybe cooking them at higher temps may make them explode, IDK. Its never happened to me either
