This has been my go-to appetizer for the past couple of years....DELICIOUS, and simple. I also make mine with both black and green olives as well as sometimes with regular halved cherry tomatos instead of sundried tomatos, or sometimes with both. Either way still delicious. I serve it up on rustic Italian bread slices, or pita bread.
Made your mouth-watering treat but ONE SERVING only for me - used everything you recommend plus anchovies (my Sicilian heritage, ahem), splash of red wine vinegar, heated gently on lower power in microwave oven - perfect with crispy pita and bruschetta, lovely, thank you!

Caponata is a summer favorite here if you like eggplant, and it stores well in the fridge. I also keep a supply of marinated artichokes/Kalamata olives/sundried tomatoes/capers in my pantry and can whip up a quick meal with either bow tie pasta served as a cold salad or warm dinner using the marinate as a dressing, or also good on white beans or garbanzo beans or butter beans if you need a vegetarian dish. Looks sooo good. I thought I can’t make this one because feta is already too aged and has too much tyramine, as I can’t eat it. But now I learned that you can bake also cottage cheese, so I will try it with cottage cheese. The tomato unfortunately is also a big NO for me, but I loooove olives, so it will work anyway 😉🥰

I know this is not an appetizer request. But you posted a photo of a Red Wine Chicken dish that you had in France. Would you be able to try and replicate? I've never had it, but it looked divine. Thanks again.
The only good ones are Morroccan blk.olives -'brined' in olive oil -soaked or dry. But used in a dish -sparingly or in haves reflects deep earthy tones. Normal canned blk olives seem not very palatable -due to the canning process or the additives added. If one loves them and consumes quite a bit of em in one sitting can empty a room of people after awhile similar to after eating pork n' beans.
To anyone thinking about making this recipe, or if you’re on the fence - MAKE THIS! It is one of the most flavorful recipes I have ever tried. I cannot believe how good this is. As it was baking, my husband said it smelled like pizza. As it was just the 2 of us, we did not eat it in one sitting, but it was gone in 24 hours. Do your taste buds a favor, and try this recipe.
