I have been looking for this method for YEARS. I do not know how long Italians have been cooking ravioli, but I but when they started (assume 100 years ago) they did not succumb to a dumb marketing campaign for them to buy a pasta stretching machine for $100 .
    Excellent.

Thank you! I'm a quarter Italian, and I love ravioli. You made this recipe fool proof! The wine bottle! You kept it 💯🙏 I don't have a rolling pin yet, I don't have wine either, I'm in recovery, but that never stops me from making great scratch made dough, for pasta, cakes, bread, or pastries! I use a rice wine,or apple cider vinegar bottle! Thank you again! I can't wait to try this! I'll make this later in the week. I'll let you know how it turns out for my husband and I. I already have a gut feeling that I probably won't be purchasing store bought ever again! 🙃 ❤ 😍 😋 🍴 🍽 🇮🇹

I would suggest to shape the left over dough into raviolis and freeze them. I have done this before and it worked well! Just make sure to add the raviolis on a tray with some parchment paper and a bit of space in between so they won't stick. As soon as they are frozen you can add them to a ziplock bag or Tupperware.
