Gluten Free and Dairy Free Vanilla Cake [Vegan]

- We know what you're thinking: WHY would I bother making a gluten free, dairy free, vegan cake? But we all have those friends with particularities and food allergies, plus it's a fun challenge. For our friend Nicole's birthday, we did something we've never done before and took a page out of Minimalist Baker's book to do it.
This vanilla cake is actually delicious. Our friends gobbled it up, enjoying it for its authentic birthday cake flavor and moist layers. There are a bunch of ingredients you might not have on hand like arrowroot starch, potato starch and almond flour, but it's otherwise fairly simple to put together. Also, many health food stores carry these things in bulk so that you don't have to buy a whole bag.
In this video, we'll show you how to put together a fabulous layer cake. Dak has some tricks up her sleeve to frost it like a champ.
This time, we decided to layer thinly sliced stone fruit on top to add color.

Did you dust the pan with potato starch because it was a GF cake? Would you ever use potato starch for a glutinous cake? It seems to have worked wonderfully!
Ah! Great question. We only did it because it was a gluten free cake, otherwise we'd just use flour. I think we can give the coconut oil the credit for the superb landing.
I made this recipe step by step and did not come out well..
Shoot! What was it like? It's definitely not as good a a cake with gluten and dairy. Do you have other recipes you prefer for cakes without gluten and dairy? Would love to try them instead. :)
