best ever vanilla cake recipe gluten-free and dairy-free light, fluffy birthday cake

  • fluffy vanilla cake recipe. this gluten-free and dairy-free vanilla cake will please even the most discerning palettes and is- dare i say better than any cake with gluten i remember eating?
    this sponge cake is so fluffy and light you'd never know that it's gluten-free and dairy-free.
    makes a beautiful birthday cake, wedding cake, celebration cake or cake for no occasion at all. Gluten free cake can be for everybody!

    • dairy-free vanilla but...
    gluten free cake recipe
    5 eggs
    Pinch cream of tartar or citric acid
    1 cup sugar
    1/2 cup neutral oil (sunflower, canola)
    1/2 cup dairy-free milk (soy, oat)
    1 tsp vanilla
    1 cup gf all-purpose flour (I use bob's red mill 1-to-1)
    1/2 cup almond flour
    1 tsp kosher salt
    1 tsp baking powder
    1/4 tsp xanathan gum
    1. Preheat oven to 350. Prep pans with nonstick spray or lining paste. Separate eggs. Egg whites into a mixer bowl, egg yolks into a large bowl. Beat egg whites until foamy.Add cream of tartar or citric acid and 1/2 cup sugar slowly. Increase speed whip until medium peaks are formed. Set aside.
    2. Add remaining half cup sugar to egg yolks. Beat with whisk until pale and forming luscious ribbons. Whisk in oil and milk and vanilla. Add flour, almond flour, baking powder, salt and xanathan gum. Whisk until smooth. Fold in egg white.
    3. Pour into prepared pans and bake 20-30 minutes. Checking that the top is firm and golden and the edges are pulling lightly from the sides of the pan.
    4. Remove from oven and run an offset spatula around the cake. Allow to cool in pan 10 minutes. Remove from cake pan and allow to cool completely on a wire rack. Is immediately or wrap in plastic cling wrap and freeze for up to a month.

      Can i ask you something, the egg whites should be soft or medium? It kinda look more liquidy in the video? When i whick medium its not liquidy its not too soft but not stiff peak either. Thanks

    I found this recipe to be more eggy & spongy than crumb and very sweet. My bobs red mill flour has xantham gum in it, so I suggest not adding more if the flour you are using has xantham gum already, or you'll end up with play dough. I used organic sugar & reduced it by 1/2... I made cupcakes with this recipe, I can say the flavors were good & cupcake wrappers removed beautifully from the cupcakes.

    I made this & it is absolutely delicious - the texture is to die for & the flavor is mild but tasty. I ended up using all Bobs 1 for 1. That being said, something kinda weird happened - it shrunk inwards about a half an inch, maybe a bit more, as it cooled. It was much more evident on the cupcakes than the cake itself. Any idea why or what I could do to help next time?

      I used oat milk if that helps/changes anything. Not sure if it would matter. I also didn't put in the XG bc the Bob's already has it.

      Hi! Thats totally normal! As it cools the protein from the eggs tightens. You could try baking it for a few minutes less and add a tiny pinch of xanathan gum. I've been using all gf flour instead of almond + gf flour (so 1 1/2 cups flour) and they more or less remain the same size when they cool. You. can also boost the vanilla up to a tbsp!

      For sure! This cake is wonderful when made with coconut sugar or date sugar instead of white. Also love coconut sugar in buttercream!

      Hi! You could try subbing 1/2 cup dairy free milk + 2 tbsp white vinegar. And mix everything together all at once. Going to release my vegan cake recipe soon!

    Several questions/comments: First time trying this, thanks for making the video, There is no mention of baking soda in the video but it lists it in the written text of the recipe below the video, so is baking soda added or no? My cake did not rise like yours did, so maybe this is the issue. Also there is already xantham gum in my flour, should I add extra? Also, xantham gum is not listed in the written ingredients below, maybe add it?

      Hi Ellen! Thanks so much I’ve changed the written recipe to match the video. Most of the lift is coming from your eggs .     Can this recipe be doubled and put into a sheet pan to make a large but not to tall cake? I’m baking for a wedding and my go to recipe does not double well in a larger pan. This one looks like what I need but I’m nervous if it will do what I need.

      Yes! Totally normal. Since posting this video a year ago I've started using 1.5 cups of gf flour and eliminating the almond flour. Less shrinking! Happy baking!

    Could I use Bob's red mill paleo flour gf which is like a substitute for 1 to 1 instead of the 1 to 1 gluten free bob red mill flour i am gf df diet but also i cant have grains such rice or millet so i was wondering if this would work also for the flour

      Yes you can! It will just be very firm when cool/cold. Make sure you serve it at room temp.

    I just came across your video, have you ever done it with monk fruit or another "fake" sugar? Im trying to figure out how I would switch out the sugar.

      Yes! Monk fruit, erythinol, etc you can use 1:1 or about 3/4 cup sweetener per cup of sugar if you like it less sweet. For frosting I heat up the 150g egg white + 250g sweetener until the sweetener is dissolved. Whip into a meringue and beat in the butter/shortening like in the frosting video.

      I find cakes always turn out very dense in texture when I use replacement sugar (my partner is diabetic and I make them that way for him). My favourite replacement sugar by far is Bochasweet, but man is it expensive. I find things like ice creams, cheesecakes, pie fillings, work great with the Bocha Sweet. Cakes and cookies aren't "quite" the right texture IMO. Cookies turn out too cakey, and cakes too dense.

    K....help! What is your cake flour recipe!! I can't use xanthan gum. I use ground chia seeds. So buying a baking mix is out. I'm making the cakes for Friday.

      4 parts white rice flour (4 cups)
      1 part brown rice/millet/sorghum (1 cup)
      1 part potato starch (1 cup)
      1/2 part tapioca starch (1/2 cup)

I only have the super fine brown rice flour. 😑Think it will screw it up if I use all super fine brown rice flour? I mean I have white rice flour.... but it's Bob's and ...not fine lol Uuggg.
