Hi! :) I think that the two methods are usually used for different types of items. I prefer this method for jams. If you want to preserve whole fruits or veggies, water bath canning works better.

Aww, that's awesome! :) We get it in our grocery stores but only in the spring and only for a few weeks!
My mother used to top the jam with wax to seal the jam before placing the jar lid.

Doing a quick swirl of boiling water doesn't sterilize. You need to boil or steam those for 10 minutes.
True. Also true....this step is unnecessary bcs it all occurs during the boiling process.
I use a sache of lemon zest in lieu of pectin.

If properly canned, they will last for several years. Just keep the jam stored in the pantry, away from direct sunlight and heat
