I used to be a sushi chef and got trained by a couple chefs that came from Japan, they had 25 and 35 years experience. Got my butt handed to me but learned how to make sushi the more traditional way. For the salmon if you want it how we did it and for it to be more safe you need to first salt the salmon with kosher or a larger grained salt for 15-20 minutes then rinse it off and and pat it dry before needing to freeze it for 3 days if it was never frozen before to kill some parasites that maybe in the fish. The size we cut the salmon is 4 finger width or you can say 3.5-4 inches wide for saku pieces and when cutting sashimi or sushi you just cut from 1 side to the other so they will all be the hand width size. The sashimi is cut slightly less than twice the thickness than for nigiri.
For the rice it is rinsed until the water is not vert cloudy anymore then is a straight 1-1 ratio and is cooked for 40 minutes. Next the seasoned rice vinegar ratio is 1-3 of rice so 1 cup of rice 1/3 cup vinegar. You cut the vinegar into the rice and let set for 5 minutes then mix 1 more time to be sure all the rice is evenly coated in vinegar and let cool until warmer than your body temperature. Next put the rice back into the rice cooker that is not on and let rice rest to fully absorb all the vinegar which will change its texture as well for atleast an hour.
When making rolls we use half sheets so the rolls are more bite size and to make it easier to spread the rice use vinyl gloves with a little oil on them so the rice doesn't stick, I did not use gloves unless we had to do large parties but it makes it twice as easy to make rolls since the rice doesn't stick that much coz of the oil.
For Nigiri sushi the rice ball size should be from you middle 3 fingers long and if you just bend those fingers the rice should be as tall to the tip of them so say 3 inch wide and 3/4 inch tall. To form the rice ball you can for your pinky finger down so the rice doesn't go out that side and close the other side with your thumb making a pocket and forming the top with you pointer finger pressing flat over the rice then just put light pressure before flipping the rice ball pver and doing that 1 more time.
Good luck for your next attempt but I think your technique for roller the sushi rolls is pretty good.

Quang i'm a sushi chef, I have 3 tips for you... next time use half the rice you used on everything including sushi and rolls, on your dragon roll cut it into 8 pieces instead of 4, and finally, when you cut the salmon for sashimi, cut out the middle section as it has a membrane that makes it tougher. Although great job!

All of you that have negative things to say are so ignorant. In Asian cultures its normal to smack and make noises while eating, its seen as a sign of respect to the chef, that you are enjoying the meal. In America and other countries not making noise is the way to go, to show youre not "rude". Other countries do not need to abide by your american beliefs. Let him enjoy, the way he makes it seem, i know he's enjoying it and its delicious.

when 90% of the comments in the comment section are people complaining about him smacking that’s when we start to step up and argue I would understand if it was only like 1 or 2 comments but literally this is at least the 20th one I saw and it’s really getting annoying.
