The pancakes came out AMAZING. 🤩I added 2 Tbs each of ground flax & wheat germ. They were taking a while to cook through so I made some into waffles to expedite my time in the kitchen. They mix up quickly and store well in the fridge or freezer. I've been loving them with some tofu scramble in the morning. Thank you!!!
I tried getting an air fryer but it didn't work. May i ask what brand you use? or is there another way.. like lightly in the oven. And good tip about the juice! just measure in a shot glass, lol

Thank you so much for your videos!!! I've been so overwhelmed this past year trying to figure out macros and change non-vegan meal plans into vegan ones that fit my given macros. It always seemed like I was cutting myself way too short on micronutrients and I was just feeling fatigued and about ready to just stay below my calories and not worry about macros and hitting a certain protein amount while weight-training/cutting. You're my hero, one totally badass rad vegan chica!!!
You’re amazing!! Thank you for putting this whole video together. Really great tips and you looks amazing! Good luck with the rest of your prep and in the show! ☺️👏
Making the pancakes for my prep! Also loved the “seriously all the Nooch” because that’s me 100%! I already used the nooch and adobo I had left over from your seitan on my tofu in the air fryer! 🤗
You look amazing!!! ✌️❤️🌱So do all the meals! 😋 I just subbed after watching your waffle video (where I left a comment on GF Vegan athlete eating). I see you do mention GF alternatives...and I see you eat a LOT more tofu and tempeh than what you tend to "hear" is safe to consume. I love it!!! This video was so helpful and enjoyable! Thank you! ☺️
I have put a lot if weight on in the past couple of years, and I have begun my journey as a vegan to achieving a fitness model body. Your videos have been so inspiring. Thank you for what you do, I am definitely going to order your book!!!
Love these kinds of videos. Thumbs up. Thanks for including the pancake recipe. Can you share details on the roasted edamame? What brand? Where do you find them in the grocery store? I've haven't seen them in my local Whole Foods but I don't know where to look. Thanks again.
I just tried making the pancakes for my partner and I.... and I ruined them so bad! Haha. They were really thick and didn’t cook through properly. I’ll try again next week. We’re both vegan and I’m expecting my first baby, a boy, this December. I have weight trained throughout my entire pregnancy and I’m so glad I found your channel :)
Congratulations on the new addition! How exciting! Vital wheat gluten can be a bit tricky to work with if you're not used to it...try this pancake recipe instead...ruclips.net/video/_Xau7gdm7wk/видео.html These are very easy!
I really adore your energy and content. and Yeah Please I really would love more meal prep vids. You're inspiring and giving me tons of ideas. And good luck on your competition
Hey Natalie, LOVED this video. I was looking over your website. It would really help if you listed the macros along with your recipes and possibly upcoming recipe books. Love your channel and all recipes high in protein !
Hi Natalie, Your videos are really helpful; thank you so much for sharing and being an inspiration! One question - why did you prep for only four days? Do you prep for the other 3 days separately?
First off I love your videos and I really appreciate that you make them!! I have been wanting to slowly eliminate animal products but I'm not sure how I feel about tofu, tempah, and veggie crumbles. I'm overweight and want to lose around 40 pounds. Are those meatless alternatives ok and healthy for me to eat? Can I lose weight swapping my lean ground turkey, chicken breast, and fish for tofu and tempah? I see you eating them but I have alot of fat to lose and I'm getting overwhelmed, the weight is coming off very very slowly, and I'm just over thinking all of this.
All these recipes look amazing and super easy to make for meal prep! I will definitely be trying them out especially the tempeh recipe. I eat tempeh a lot and always love finding new ways to change them up. Have you tried the pancakes with either blackberries or strawberries? I'm not a blueberry fan, even though I know how great they are for you, just can't get myself to like the taste of them.
Thank you! I don't know what they will be... There's no perfect number. My coach makes changes as we go depending on how the body responds. It changes every week and during peak week we might even make adjustments daily.
Thank you so much!....The LB is not chalky at all. I tried many many proteins before I decided to partner with them. I'm extremely picky when it comes to my protein powders. I love this one and I no you will too.
I got my blood work done recently and iron is fine. Most of the things I eat are very high in iron: tofu, lentils, chia seeds, kale, pumpkin seeds, quinoa, just to name a few...are all great sources of iron.
cheryl lewis yay! So happy you’re enjoying the content!!!! I’m so excited for you💗 you got this💪🏽 I love my air fryer 💗 Makes the perfect tofu, potatoes, and roasted veggies 💗
YY P Thank you so much! These pancakes are amazing💗 I really been enjoying them😋 Let me know if you try them out😄 I love my airfryer, it’s so convenient. Here’s the one I use: fitveganchef.com/product/blackdecker-purify-2-liter-air-fryer/
Jessica Riley I like to grill, bake, or cook over med-heat. For the tofu in this video: place tofu in a baking sheet with parchment paper. Bake at 400F for 20 minutes or until golden brown.
What do you suggest for someone who wants to go through this journey but can't afford much. The meal planning looks good but the grocery list looks pretty expensive.
This was actually a pretty easy an cheap meal prep. I cost me less than $100 for all the meals and snacks for the week. I bought a lot throughout Amazon and Trader Joes that are cheaper options. Tips to keep groceries cheap: buy in bulk(some groceries give you discounts if you buy in bulk), buy the "store brand", and buy in season. Potatoes, legumes, seasonal veggies, and oats are some of the cheapest foods out there.
Hi sweet Natalie! Quick question- how much of the protein are you getting from the food, and how much from the clean machine? I remember that when I tried to hit the 120 grams protein a day, it wasn't easy for me without supplements, or without eating a lot of tofu and seitan (I can't eat tempeh for some reason- it gives me stomach aches). Thank you!!
Nat!
It’s not about me!
Stupid question but wondering if the result for the tofu would be similar just using the oven (can you tell who doesn't have an air fryer - yet :-) ). You're looking great BTW - if this is 4 weeks out, you're really going to be super ripped going in. LOVE that you haven't demonized the avocado while in contest prep mode!
Yes, girl, I LOVE IT! That avocado is packed with fiber and healthy fats. The tofu comes out similar, it takes longer to cook depending on the oven. You can bake it at 400F for 20 minutes or until they get golden. With the air-fryer, the tofu gets nice crispy outside and chewy on the inside. Air-fried tofu tastes just like fried tofu, but without the oil.
I don't use oil at all. Guess I need to bite the bullet and get an air fryer. Speaking of no oil, will a drop or two of water prevent sticking with the pancake batter - I don't use PAM either.
I have a few different tofu and tempeh recipes on my website: fitveganchef.com For the tempeh in this video: Cut 3 blocks of tempeh. Coat the tempeh in BBQ Mesquite spices and Braggs Liquid Aminos (I don't measure these) Bake at 400F for 15 minutes, flip and bake for another 15 minutes. All the details are in this video. For the tofu: Cube 3 blocks of extra firm tofu. Coat tofu in Nutritional yeast and Adobo seasoning. Air-fry for 15-20 minutes at 400F ( bake at the same temperature if you don't have an air-fryer) All the details are in this video. Adjust amount based on personal diet goals.
what other suggestions do you have besides tofu for protein. I don't mind it but don't like to eat to much of it because of how it can mess with my natural estrogen levels in my body.
Trixie Rose Thank you. I help him out with his meal prep, he has a lot of macros to play with, we have lots of fun creating his meal prep. We do different meal preps...he has completely different macros and he is in his improvement season “bulk”.
Amazing recipe ideas, you're doing so great! Big expectations this year. Can I ask - Why did you use the wheat gluten instead of a protein powder? Are there any benefits to it, or perhaps it just lasts longer at room temp? Thanks in advance! :)
Kylara Dreloth Great question!! I used vital wheat gluten, because it actually adds more volume and protein and it gave me the exact pancake texture I was looking for + they keep better. Thank you so much for all the support!
Kylara Dreloth no problem! I love using it! It makes the perfect base for a homemade seitan, protein bread, or higher protein baked goods... Besides adding a ton of protein, It works as an amazing binder in vegan recipes. +it’s super cheap !
Natalie Matthews Fit Vegan Chef oh okay thanks Natalie I was just curious. I’m getting into food prepping and I’ve been lifting more than ever for the last 6 months so just moving more toward that way of doing vegan! I’ve been vegan for 81/2 years now and 2 pregnancies and I’ve look good throughout but I’m at theat point in life were I want to achieve my dream body as I’m not having anymore kids.So just been binge watching your vlogs lately! I got really caught up in the whole high carb low-fat thing and tons of cardio for years and it just didn’t really change my shape or make me stronger! So it’s nice to see your style of doing vegan it inspires me to stay on this path. I tried vegan keto for about 4 days and fell off.. just couldn’t hang with that high fat regime.. I love carbs to much.. Do you intermittent fast? I’m kind of fasting today but had one meal today! If so if your goal is to get toned and lean do you recommend fasting? What are your thoughts on the OMAD or Warrior ways of eating? I’m going on but your channel inspires be to get stronger and get back to vegan vlogging.. so thank you! I follow you on insta to.. okay 👌🏼 take care and best of luck.. thank you! April 😊🌱@fitveggiemama
They change constantly, especially during prep. During this prep, they have ranged anywhere from 150-290g. We adjust based on how my body is responding.
Katharine Jones Great question! Nutritional Yeast aka(nooch) It’s a vegan Seasoning that has a cheesy flavor. Nutritional yeast is high in vitamins b and b12. It’s delicious!
I'm allergic to soy and sensitive to gluten and nuts. And also very sensitive to legumes...I have tried high carb starchbased but it's impossible to feel satiated even if I eat 3500 kcal!! Bloated and hungry all the time...And impossible to get over like 50-70 grams of protein/day without eating even more calories and my body can only handle about 2200. I would have to totally rely on protein powders to get up to enough to build enough muscle mass. I really want to become 100 % vegan again (was for ten years but my health really struggled for the reasons above.) It's just hard when I can't eat soy/legumes/nuts/grains in the quantity needed. (And soy not at all of.) *sigh*...I am pescetarian now and have ditched the dairy and eggs but I really want to ditch all animal products!!!! I just don't know how when I would have to live on fruits, starches, greens and protein powder. That is seriously not satisfying and satiating...I have tried! It's horrible! I envy you all that can easily eat all the legumes, grains and nuts you want and need! I don't know what to do but I'll keep on trying!Best regards!😊😍
I'm sorry. This must be very hard for you. I definitely would recommend working with a plant-based doctor that could help you with your food allergies. They might be able to slowly incorporate some of these foods to build your system to tolerate them in the future. Check out www.plantbaseddoctors.org to see if there's any near you.
There is a way to get these kinds of things made from lentils and or beans. Switch nuts for cashews since cashews are not nuts. Switch gluten for buckwheat flour in the pancakes. Tempeh is not always made with soy beans. You can actually get or make tempeh from any type of beans! You can also switch the firm tofu with chickpeas. Put the same coating on the chickpeas into the air fryer and they become crunchy on the outside.
truvelocity Thanks! I am sensitive to cashews and legumes in general though. But I try to incorporate as much as I can. Interesting that tempeh can be made from other beans! I have to check that out! I also will try the chickpea tofu. Thanks!😊
MNYR 907 Not fun to be allergic/sensitive!....😓 Legumes causes gas, bloating, stomach pain, head aches, heart arythmia, night sweats. But I can tolerate a smaller amount for the most part, but if I eat a full meal...it's rather painful, yes....phew!
Ughhh I hope to find a natural vegan body builder. How come it’s so hard to find vegan body builders who are supplement free? 😩😩😩....Were you ever supplement free with your gains? I want natural gains (aka food only).
I use a vegan omega from a flower, b12, and cell block (ashwagandha herb), protein powder from plants :) All Clean Machine products are from plants and minimally processed. As an athlete, I supplement as a preventative measure. During a cut or a caloric deficit is very important to me to supplement to make sure the body is getting all the nutrients it needs.
The pancakes came out AMAZING. 🤩I added 2 Tbs each of ground flax & wheat germ. They were taking a while to cook through so I made some into waffles to expedite my time in the kitchen. Hi Natalie,
Your videos are really helpful; thank you so much for sharing and being an inspiration! One question - why did you prep for only four days? Do you prep for the other 3 days separately?
Thank you!
After four days food starts to get a bit soggy and loses flavor.
Do you use Double-acting baking powder for your recipes? Loved the video!

Those pancakes looks like the perfect postworkout 😍. How many calories are in this video?
Thank you! They are so yummy!
PS Good luck May 12th Natalie! ☺️
Thank you!
You are welcome! ☺️
Do you feel that you need a syrup for the pancakes, some sort of sauce for the tempeh, etc? If so what do you use? Thanks for these awesome videos!
what other suggestions do you have besides tofu for protein. I don't mind it but don't like to eat to much of it because of how it can mess with my natural estrogen levels in my body.
Beans, homemade seitan, bean pastas, lentils, quinoa, peas, texture vegetable protrein made from peas, dark leafy greens, garbanzo flour, gluten, etc...
Natalie Matthews Fit Vegan Chef sweet thank you
These are great! Does your husband meal prep for himself?
Trixie Rose
Thank you.
I help him out with his meal prep, he has a lot of macros to play with, we have lots of fun creating his meal prep. We do different meal preps...he has completely different macros and he is in his improvement season “bulk”.
Lucky him :) It might be fun to see his meal prep as well!
This boy is cute!
Yayyyy
Amazing recipe ideas, you're doing so great! Big expectations this year.
Can I ask - Why did you use the wheat gluten instead of a protein powder? Are there any benefits to it, or perhaps it just lasts longer at room temp?
Thanks in advance! :)
Kylara Dreloth Great question!! I used vital wheat gluten, because it actually adds more volume and protein and it gave me the exact pancake texture I was looking for + they keep better. Thank you so much for all the support!
No, thank you for being such an inspiration!
Kylara Dreloth no problem! I love using it! It makes the perfect base for a homemade seitan, protein bread, or higher protein baked goods... Besides adding a ton of protein, It works as an amazing binder in vegan recipes. +it’s super cheap !
That's amazing, I was thinking about buying it just yesterday. I've been vegan for only half a year but homemade seitan seems like a game changer (y)
Kylara Dreloth Oh you need to get on that! Lol
Homemade seitan is much better than store bought. 💗
Do you use maple syrup?
I do! Not this close to show day though... I use apple butter or a low calory jam
Muchas gracias! Buenisio goal! Voy a ti ;)
When I put this recipe in Cronometer it comes out to 773 calories per serving not 380....
What are your carbs usually range?
They change constantly, especially during prep. During this prep, they have ranged anywhere from 150-290g. We adjust based on how my body is responding.
How long have you been a vegan?
I've been vegan for almost 6 years
Where can I buy blocks of Tempeh?
Most stores have them in the refrigerated section.
Sometimes I see them in produce department
Thank you.
♥️ you
Love you back!!!
I love your channel and Instagram! I was wondering, if you just eat your avocados by themselves? Like an apple? :) you’re so amazing.
Middony Roman Thank you!
I mash it up, I add a bit of salt, and have it with my lunch and dinner.

What should I do if I'm allergic to avocado? 😩 #veganfail
OH NO!!!!! nuts or seeds, or a vegan cheese spread
I'm a newbie, and I have no clue what nooch is .-.
Too much soy for one day.
Other than that,nice video 👍
This is brilliant. All my favorites yum
