I made this and the cake is SO MOIST and YUMMY and tender! I swapped 1/2 the oil for melted-then-cooled butter because I like the butter taste but wanted the moistness from oil. I also used milk + Apple cider vinegar (30mins resting time) instead of buttermilk as I couldn’t find it in my grocery store. I also set aside some baking powder and mixed it with 1/2 tspn of Apple cider vinegar quickly and poured it over the mixed batter at the last bit to give the cake more rise and tenderness. I couldn’t believe it but it works perfectly in the microwave! So soft and so moist. My microwave needed a tad more time but it was easy to tell when the cake is done. I used the frosting recipe from Emma’s Goodies as it uses less sugar but remains pipeable! Beautiful cake! I love it!

Red velvet has always been my favorite cake. I have a beloved recipe from my great grandmother. I love my great grandmother’s recipe so much, that no other red velvet cake has ever compared to her’s. I guess you could say her red velvet cake is the “Best Ever Red Velvet Cake”, at least in my book. I never would have thought to add cinnamon to it, but I would love to try it, and that’s saying something!

For people wanting to try this, I highly recommend it. I tried it using a oven at 180°c and it took around 15-20min. This cake is simply amazing... It's moist and fluffy, yet not too sweet, and it has a nice chocolatey flavour. I even made it using milk instead of buttermilk, so it's really versatile :D If don't try this you might regret it!!

Hi Gemma! That cake is beautiful! I can see through my screen how moist it is! I first learned about red velvet cake when I worked with a fellow teacher from Georgia. This was a while ago before red velvet was a really big thing. She made us some. By the time it became popular up here on the East Coast I had tried many versions and red velvet had become one of my favorite cakes. The only problem I found was that there are many different versions of the recipe and some do come out dry. I had my best luck with cupcakes. Thank you so much because while I do love some cupcakes, there is nothing like a piece of real red velvet cake! This recipe looks brilliant. Thank you for the extra video yesterday. That does look like the best ever cream cheese frosting. I think I'm ready to go for Valentine's Day with a cake! Fun fact - you do a lovely job decorating cakes and cupcakes and all your treats! I wouldn't say it if I didn't mean it.❤❤

I used this to make a rainbow velvet cake since I didn't want to use the oven for hours baking all the layers. It tastes great, no difference at all from a traditional velvet cake!!!

I made this for my sister 's b day and it tastes amazing . I only made half of the recipe as the cake was really big . I made a yought cream cheese frosting as I didn't have cream cheese as it is not available where I live but it tasted amazing

Sounds like an issue with the pans you are using. Microwaves need to be able to penetrate the material in your pans to be able to bake. The heat is generated in the food, by vibrating the water, sugar, and fat molecules. The heat then distributes through the food. The shape, and material in the pans is important. It needs to be microwave friendly, Metal cannot be used, and some other materials are not ideal. Heavy ceramic, or pottery dishes are not good either, they will steal the heat! @@April-vc9rq it also might be that your microwave does not cook uniformly - had an issue with one microwave like that. It would literally heat some areas and leave others be I have to move food inside it periodically to heat up all the the same time.

GBU abundantly.... your receipes are simplified and most ingredients very much available in our Mumbai (India) stores.... Friends and family and colleagues just loved it.... I also added my christmas soaked dry fruits in rum which was in the fridge and the cake was out of the world... Thank you is a very small word .... But still I want to tell you Thank You....

Hi there, you can make cupcakes with this batter, you need to have the correct holders, but actually a muffin paper case may well work for you. You will also need to watch the timing, they will bake at different times, as this is how the energy distributes. When one is baked remove it, and continue :)
Hi Gemma. I am a great fan of your microwave recipes. I just moved recently and the place does not have a oven but thanks to your recipes like this, I haven't stopped baking. If you could possibly also share a carrot cake recipe made in the microwave, I would be even more grateful.
I'm not sure if this is already listed on the website, but if anyone can't have or wants to avoid dairy, you can let dairy-free milk sit with some apple cider vinegar (there are many recipes out there for the precise proportions). Especially with soymilk, it should curdle and give you something like buttermilk. I don't even buy buttermilk anymore, because it's such a great substitute.

my microwave cakes always turn out rubbery on the inside and undercooked on top. What am I doing wrong?
Sounds like an issue with the pans you are using. Microwaves need to be able to penetrate the material in your pans to be able to bake. The heat is generated in the food, by vibrating the water, sugar, and fat molecules. The heat then distributes through the food. The shape, and material in the pans is important. It needs to be microwave friendly, Metal cannot be used, and some other materials are not ideal. Heavy ceramic, or pottery dishes are not good either, they will steal the heat! Gemma Stafford I haven't made cakes yet, only tried the mug cake recipes. So I've been using regular mugs.
@@April-vc9rq it also might be that your microwave does not cook uniformly - had an issue with one microwave like that. It would literally heat some areas and leave others be I have to move food inside it periodically to heat up all the the same time.

GBU abundantly.... your receipes are simplified and most ingredients very much available in our Mumbai (India) stores.... Friends and family and colleagues just loved it.... I also added my christmas soaked dry fruits in rum which was in the fridge and the cake was out of the world... Thank you is a very small word .... But still I want to tell you Thank You....

Hi there, you can make cupcakes with this batter, you need to have the correct holders, but actually a muffin paper case may well work for you. You will also need to watch the timing, they will bake at different times, as this is how the energy distributes. When one is baked remove it, and continue :)

I'm not sure if this is already listed on the website, but if anyone can't have or wants to avoid dairy, you can let dairy-free milk sit with some apple cider vinegar (there are many recipes out there for the precise proportions). Especially with soymilk, it should curdle and give you something like buttermilk. I don't even buy buttermilk anymore, because it's such a great substitute.
