Dr. PAL... I love your Videos...
I'm a Parsee so we make Pumpkin ka Patiya with fried onion, add curry leaves, paste of garlic, jeera, green and red chillies, mustard seeds, and Cilantro... Fry the paste in a little bit of oil with the onion.. Once the Masala is roasted, add a little turmeric, parsi sambhar to your taste mix it well, and add all the cut-up pumpkin pieces to it.... Add a cup of water to blend the spices with the Pumkin and leave it covered over med heat.... You can also cover ot with a thali ½ filled with water... This will keep the moisture in the pot and prevent evaporation... Check in 15 mins... Stir and check if the pumpkin is cooked. IF NOT ADD WATER TO MOISTEN THE PUMPKIN , STIR, COVER, AND LEAVE IT TO COOK FOR ANOTHER 15 MINS. Once the pumpkin has softened, add some jaggery and tamrind paste mixed in hotwater to the Patiya and mixed it well... Atbtge end you can add more freshly cut Cilantro to the cooked Patiya... Eat with Papad and Khichadi...

Steam and mast it and just have without adding anything
Other way, simple sabji by adding curry leaves and few spices salt with 1 tsp of ghee serve with roti and rice..
One more, pumkin kheer, by adding milk, pumpkin pulp (steam and mash) and some dryfruits and dates for sweetness ( dates optional as ripe pumkin has natural sweetness)
