This looks like a great recipe for carrot cake, I love the addition of coconut! I appreciate that the ingredient measurements are given in grams instead of cups. In the past I have not had the best of luck with making carrot cake but I learned some great tips here, especially about weighing grated carrots instead of whole carrots and then grating them. I love how Akis explains things and tells you how things will go wrong if you don't do it in a specific way. Other chefs don't really explain, hence why sometimes when you make their recipes they don't turn out right.

Is there a gluten free flour you recommend that I can substitute into this recipe? I absolutely love carrot cake, but I haven’t been able to have it in over two years.

You can put vanilla for extra taste. If you don't want it you can omit it.

LOLOL VERY IMPORTANT TO SCALE THE INGREDIENTS THE ONLY THING WAS SCALED WAS THE CARROTS NOW HOW MUCH FLOUR HOW MUCH SUGAR BUTTER ETC.
