  • I used trimmings from the Beef Tenderloin Roast used in a previous video and let them roast for about 4 hours in the crock pot with equal parts garlic salt, onion powder, black pepper and smoked paprika. Once cooked through and very tender I pulled all the weird bits and fatty pieces and then "pulled" the rest and placed back into the broth.
I actually let it cool overnight and finished making the rest the following day which allowed me to skim the fat off the top of the broth. I suggest that part.
For the noodles I used an old family recipe from one of Lesley's Uncle's. It called for 2 cups all purpose flour, 3 egg yolks and 1 whole egg, 1tsp salt and 2 TBSP water.
I mixed all of that up and it was still very dry and flaky so I did end up adding another couple of TBSP water.
Once I rolled out the dough I let them rest under a towel for a few hours before rolling them up and cutting into slices. I probably could have cut them a little thinner but sometimes a big fat noodle is what you need. Don't hate the player.
From there, I boiled the noodles in water before mixing into the beef and broth. You could easily just dump them into your beef and broth mixture, it'll thicken up once you do that.
Give it a shot. You won't be disappointed.
