INGREDIENTS
1 1/2 lbs ribeye beef steak
1 large egg
1 Tbsp Shaoxing cooking wine
1 Tbsp soy sauce
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/3 cup cornstarch
1 tsp baking soda
3 scallions
SAUCE
1/2 cup beef broth
2 Tbsp Hoisin sauce
1 Tbsp soy sauce
1 Tbsp Shaoxing cooking wine
1 1/2 tsp sugar
2 Tbsp cornstarch
2 tsp dark soy sauce (optional)

Marinating thin slices of meats in baking soda is how to get the meats to be "soft", you know what I mean if you've eaten it at a Chinese restaurant or similar.

I had the most delicious Mongolian Beef in a great little Mom and Pop Chinese restaurant that’s 14 miles away. Now that I don’t drive, that’s an 8 hour round trip via handicap bus, but worth it. What puzzles me @SimplyMamaCooks is: you have that gorgeous wok but didn’t use it for this excellent recipe. Thanks for making this great video.

Please don't get mad, but all the Chinese take out joints here have Mexican cooks. I can't see them but the Mariachi band music coming from the kitchen kinda gives it away.😅

The whole US restaurant industry runs on Mexican and Central American labor.
They could be in the back washing dishes. I'm Mexican and did not cook at the vietnamese restaurant I worked at but I did wash dishes. Lol
Are you in California? I noticed this same thing when I was in San Diego. The restaurant I eat at here in Tennessee, has Mexican cooks for the most part, however the owner cooks as well. It taste good, so that's all that matters.

Isle of Man golion beef. I always thought it had brown sugar though. I'm glad to see this recipe.
Yes there are many meat sauces that use brown sugar, and this one does certainly if you like it better that way.

Any adjustments you'd make to do this with chicken? Thank you! Our local Chinese 'buffet' adds a pinch of red pepper flakes & serves over rice noodles. SO good...but your looks healthier.
As long as you cut the chicken into thin slices, I imagine you can just as easily use chicken in place of the beef without any other changes. You could use chicken broth instead of beef broth. You could add teriyaki sauce, or a different sauce you like, instead of hoisin sauce for a different flavor. Maybe orange for orange chicken. Maybe curry for curry chicken. Brown sugar instead of regular sugar. So many possibilities to experiment with.

Looks very delicious. But...does it come out velvety tender like at restaurants? I've tried it like this, but I still can't seem to get that soft, melt in your mouth, tenderness. I tried adding more baking soda, since that's what tenderizess it, but it ends up getting a fishy aftertaste.
The extra cornstarch sauce is a great idea. I love pouring the remaining sauce on my white rice.
Do you thoroughly rinse off the baking soda? I rinse mine minimum 3 times.
@@spacecase8791 I was just going to mention this, as I also read that you need to rinse off the baking soda after like a couple minutes, so that it doesn't get that strange smell and taste.
Let the beef marinade for several hours and use flank steak or better

I won’t use the cooking wine… what could I substitute ?
Some online sources recommend using a bit of vinegar or lemon juice diluted with water since they are more acidic than wine. One source specifies the following substitutions for wine: apple cider vinegar, apple juice, white or regular grape juice, white wine vinegar, ginger ale. If you don't want to add any of these, you can just add plain water which won't change the flavor but it will keep the intended liquid volumes of the recipe so the food doesn't dry out.

Try this with potato starch instead of baking powder
Mixing salt with caster sugar a popular problem when baking. I killed a lot of chooks by that mistake. Didnt rrealize until I rebaked the cake and tasted the mixture. Too late by then.

I personally do not leave the baking soda on it, as when I did this before, it ruined it, and was disgusting with an aftertaste and smell. I now only put the baking soda on it for a couple of minutes, then rinse it off thoroughly before adding my other ingredients and the beef still comes out tender and delicious, but this to me is more like the beef with broccoli recipe that I do, not Mongolian beef recipe, but it's good for beef with broccoli. 😊
That's because you are supposed to use CORN STARCH! I made that mistake before and messed it up bad!!! Lol

You should have let the sauce rest for a while and let it cool down. That way when you coat the beef it retains it crusty crunch texture

Mongolian beef is more American. In Mongolia, home cooks boil the meat and then dip it in a sauce.
