    I really like the concept of a core recipe. I love to watch RUclips videos of various people making a classic recipe to understand the core of a recipe. Each village cooks things differently but there is a common core.

      Definitely - and then people get all twisted around what they believe to be 'authentic'. We firmly believe that if you understand the core idea of the recipe; make it your own to suit your taste, and the ingredients that you can get your hands on. We'll be doing a Beef Brisket Taco recipe next week... total riff on this idea.

    Wow, I found your channel a few months ago, maybe around the holidays, and this is probably my favorite video of yours, actually. Did you not continue this series? I guess it's hard if things don't get many views. Or maybe you didn't like making this video? The food history is my favorite, then the food science, so your key lime pie videos were great.

    Hello, how long do you usually spend on your research for a recipe?

      Some take a few weeks, and others happen very quickly. Most of the recipes are built on years of experience.

    Why do you specifically mention old cookbooks? What is wrong with new ones? Is it deception? (I’m a very frustrated recipe follower)

      Mostly because I have a collection of 1000s of cookbooks from the mid-1600s to 1940.

    I know something that hasn’t been tried… A RUclips video telling you how to create a recipe!! You just told us that you did research that’s not very helpful from those people and I did some research to I was just curious what the videos were on this and you did not tell anybody how to do it so I feel like I should make a video on how to actually do it because it’s not even that difficult which you know....
