The authentic Hong Kong Guangzhou broth is much better but harder to make. Its pork bones, dried flounder fish and dried shrimp which gives it a seafood umami twist

I agree, there is a restaurant near me that makes wonton soup that is light years better than all the other Asian restaurants my area of the city, I never knew soup could taste so fantastic. The owner started out with a restaurant in Hong Kong, then sold and moved to the US. It took me a couple of years in my kitchen before I was finally able to emulate well. I quickly learned about the dried shrimp, but I still couldn't get it right until I found out about the pork bones and lightly roasting the dried flounder over the burner.

Thats how my family makes the wonton wrappers. I like the way you use the knife, I'll have to try that instead of a spoon. Our soup is different though. We use pork stock instead.

Thank you for doing this! I will try it. I love this soup and whenever I love the taste of something, I want to learn how to make it myself. Just one thing, please speak louder, there is lots of background noise. I missed the ingredience along with the chicken stock and had to replay it several times.
