Roasted Poblano Chiles

- This video demonstrates one of the most common ways to roast, peel and seed a fresh poblano chile. The finished poblano can be used whole, either hot or cold for stuffing purposes or cut in a variety of ways and used as an addition to any number of different Mexican preparations. Although the roasted poblanos have a history of being used in Mexican cooking they are also used in a wide variety of other American or ethnic cooking preparations. They can also be stored (covered in oil) for 2-3 weeks under refrigeration prior to being used.
This is EXACTLY the way to prepare roasted poblanos. Thank you chef for such clear instructions.

Hey..good video but can you do the same thing with a bell pepper b/c I really don't like anything spicy?
Yes, you can use a roasted red or green bell pepper - no problem.
I think 10 mins is more than enough so that the chiles don't break apart and still be able to peel the skin off. Also, usually in Latin American countries, it is not accustom to water them down. It takes the "roasttiness" flavor away and you don't want that because it defeats the purpose of roasting them. ...just for for thought 😁
Like I said in the video, there's a number of ways to cook the poblanos and that includes other ways of cleaning them as well. Thanks for your comment though.

You're welcome. Yes, you can not use oil but the cooking will be slightly less even and also harder to peel after cooking.
Any precautions using the broiler? I've had a pan bend up once, now I have one of those thicker aluminum pans, but I still get nervous using the broiler.
Nothing comes to mind outside of thinking about the type of cookware that buckles when put under a broiler??
I noticed this with the cheap cookie sheets. Just discovered there are broiler pans. I used this and no problems

Absolutely !!! As a matter of fact, there's probably more stuffed, baked & fried poblano formulas out there then there are roasted and diced etc. versions. Chile relleno is probably the most well known even though it's not always necessarily made with poblanos. Additionally, there's a lot of cold versions of meat, cheese and/or vegetarian stuffed poblano chilies waiting to be made and enjoyed. Have fun !!!

Hi John, how about just roasting them by just holding the pepper over an open fire? Would that also cook the pepper less, as well, and make it easier to stuff? Thanks
I've done the direct fire approach (your suggestion), I've roasted them on an indirect fire on the grill, I've pricked them with sewing needles and deep fried them, I've roasted them outright on a cookie sheet in the oven and finally, I've broiled them the way I demonstrated in this video.
The method I'm suggesting in this video (broiling) i seem to like the results of the most. All of the other versions that I just mentioned will work but the results can vary drastically with the temperature intensities and the amounts of the cooking times.
The other VERY IMPORTANT consideration as to how and how much they are cooked depends on what the intended use is for the chile. In the case of this video, I planned on dicing the cooked chilies and mixing them into a Mexican creamed rice preparation, therefore this method was perfect for my intended use.

That sounds like a plan. You can put these chile's on/with just about anything.
Why did you cover them with oil ?
It helps with the roasting/cooking process. Keep in mind, that a somewhat even coating of oil will help to evenly distribute the heat and cooking. Try and think about it as if you were sauteing something in a little oil or fat. The primary function of the oil or fat is to evenly transfer the heat to the food. In fact, in this saute example the oil is actually what allows the heat to be transferred almost entirely.
On the other hand, i could have not used the oil and still managed to roast the pablanos but it would have been with a slightly more direct heat application and much drier.
why not take the seeds out bfore roasting?
You could but then the seed roasting/being cooked flavors would be disposed of before the cooking?
