I took notes and replayed it many times during the cooking process. This is because as much as I love to cook, I'm not naturally gifted at it! But you know what? I slowly put this recipe together exactly as she teaches it (took me most of the day), and it turned out the best refried beans and rellenos I think I've ever had. And I grew up in L.A.- It won't take as much time the next time I make it and I plan on making it again next month as well as learning several of her other recipes. Great teaching and inspirational video. I wish I'd met her mother- there is nothing lovelier than a recipe like this passed down through the family.

A tip I learned from Kenji Lopez-Alt is to have a bowl of water next to you when you’re peeling the chard skin off the peppers. Put the skins in the water and occasionally “rinse” your fingers in that same water. These bits will steep in the water (think like tea leaves do) and impart a lovely flavor. I then use the strained water to make rice. So good! You can also throw the seeds/veins of the peppers into the steeping water for some extra flavor and a touch of spice!
I live in Tucson, Arizona, so naturally, I've eaten many chiles rellenos. But i think your recipe, with the homemade chorizo and the oaxaca cheese was the best. And the sauce is amazing. This is a keeper!!

It's really nice the evolution of your videos. I remember when your video thumbnail was you looking without emotion, then you started showing smiles in them. Your videos were really good but we never saw you interact with the viewer as much. You would introduce the video then it would be just all focused on the recipe. That was good but since you have amazing culinary skills and knowledge, people want to see more of you. You also have a very nice presentation of you recipes as well as your on screen appearance. You're a beautiful woman and you have a very appealing persona which you display well for the audience. I saw this in Rachael Ray back in the early 2000's when she was just starting out. I see a lot of that potential in you. Actually, I see a lot more. Anyway, You're an amazing chef and presenter. I love your recipes...who wouldn't?

There's the authentic Mexican dishes and then there are Western corrupted versions. We like the real authentic versions most. Even our local Mexican restaurants admit they serve corrupt recipe's vs. authentic. I like these with a side of poached eggs.

Without a doubt for me it would be Oaxaca cheese
