Use an air fryer 400 degrees 15 minutes to roast. Such a game changer for roasting and peeling your chili’s. The peels slip off so easily. I did 10 pounds of hatch chili’s, peeled and ready to go in 10 minutes.
I so completely agree with you on this! I have fought against using an air fryer (I'm a tad old-fashioned) for what seems a long time...as you said. Game changer. I own a rather expensive convection style oven but the simple counter top air fryer wins every time!
I was looking for something to make for dinner and here it is! I have a bunch of Hatch green chiles that I grew., roasted, peeled and freeze dried last summer, and I have chili left over from last night's pot of chili. I haven't even started and dinner is already half done. Thanks Marcy!

Chile Rellenos is one of my favorites. Everywhere I go I try them at the various Mexican restaurants. I rarely find one as good as one restaurant I went to years ago. So... of course I had to make them home made. Nothing like it in the world and I love stuffing them with ground meat. I have made them the traditional way and casserole as well, but this recipe looks amazing, and I can't wait to try. My ex was of Mexican heritage, and he made the most amazing homemade sauces. He is the one who taught me to make my own taco seasoning homemade, so now I have jars of mixed seasonings for dishes from around the world!
In my youth, and throughout most of my early years I did the same thing, trying out different Mexican restaurants both here in the U.S., and all the way down the Mexican western coastline (not the Baja) all the way through down to Chapala, Jalisco riding down on either Rt. 15 or 150 on our bikes (Harley's) back in the late 70's. It was GREAT!! Good memories had there indeed. It's amazing the difference in cuisine once you leave the comfort of the border. Anyways, try mixing 60% 70/30 beef (a little more fat is good), with 20% ground pork and 20% good quality chorizo as your stuffing. Mix up some sauteed and chopped Anaheim's into the meat mixture instead of only "ground meat". Try it, you'll thank me. ; - )

I think I grew up on this basic recipe. No meat and layered chilies and cheese. We used a blender for the yolk flour mix. It’s so yummy for a quick weeknight dinner.

I can't wait to try this recipe!! I love chile rellenos done the classic way, but I just never can seem to wind up with stuffable roasted poblano chiles. This will solve that problem so well! Been searching since the mid 80's for something close to my former girlfriend's, abulela's, recipe. I think it was made with the hatch chilies and of course the chorizo that made a huge difference. No restaurant can come closes.

My daughter lives in west Texas and every once in a while the grocery store will have a pit set up outside where they roast the peppers for you. She buys 5 pounds of them & shares them with her sister, my wife and I. They roast them & put them in a plastic bag. Up to the buyer to peel & de-seed them.

What a great idea to place them in the oven! In the past, I have fried them in a skillet and it’s just so messy. Going to try your method. Also, I have only filled them with picadillo but like the suggestion another viewer made and that’s to fill with potatoes and chorizo.

Love it. I usually end up making a casserole because I almost always have a hard time stuffing them. Watching you do it I think I discovered what I was doing wrong (I would try to clean & cut them open in my hand leaving the stem and doing the "T" cut thing). As such they'd often rip open. Hence the casserole 9 out of 10 times in our house. Also, something occurred to me after you pulled it out. Would a light spray of oil on top just before being done (maybe 5 to 10 minutes prior) create sort of a fried crust to the batter? Maybe even broiling for a minute or two? In any case, as always another outstanding video! In answer to your question about what to put in diced par-boiled shrimp, or other seafood, or diced par-boiled potatoes and/or hard boiled diced egg whites perhaps (be good with the chorizo).
Great! Have some Poblanos that are ready to come off the bush but don't have the energy to try traditional chiles rellenos again. Made a big old mess! Definitely going to try this baked version. Gracias!
Have you ever made it with much less milk in the batter, love relleno's with burger, onion filling, also one of my favorites is chicken and queso cheese sauce poured over the top an some inside with the other cheese. Thanks for many ideas, love the videos you do.👍👍👍👍
For roasting the chilis I use the air fryer and turn them once at 6 or so minutes. I just leave them in the air fryer until I am ready to peel. Makes this dish way easier.
The hardest part is just roasting and peeling those chiles. Next time, I'll have to buy those whole canned chiles for an even easier alternative. It's always good to have something you can whip up quickly when you're pressed for time.
3:26 - "Hatch" brand whole green chiles come in those same large cans at Central Market and some HEB stores in Texas. They would probably work well in this recipe.
Well, the grocery store finally got in some poblanos larger than a jalapeno, so I cleaned them out! :) We have it in the oven now - not as pretty as yours, but it'll be good. Thanks Ms Marcy!

This looks amazing. I've made them before, but this casserole version is stellar because the pan frying step, each one individually fried in a pan full of grease makes the dish too heavy. I'm a big proponent of healthy fats like Lard and Tallow, but the additional chorizo and less grease make me 🎉 very excited to try this one at home. I'm 6 mo into ketogenic eating and this recipe is totally acceptable. 🎉 YAY! **So arevyou saying you prefer Anaheim peppers (?) Or, you prefer Hatch chilis(??)

Love it. I usually end up making a casserole because I almost always have a hard time stuffing them. Watching you do it I think I discovered what I was doing wrong (I would try to clean & cut them open in my hand leaving the stem and doing the "T" cut thing). As such they'd often rip open. Hence the casserole 9 out of 10 times in our house. Also, something occurred to me after you pulled it out. Would a light spray of oil on top just before being done (maybe 5 to 10 minutes prior) create sort of a fried crust to the batter? Maybe even broiling for a minute or two? In any case, as always another outstanding video! In answer to your question about what to put in diced par-boiled shrimp, or other seafood, or diced par-boiled potatoes and/or hard boiled diced egg whites perhaps (be good with the chorizo).
Those all sound great. Also, I love your idea to lightly spray oil on top. I'll have to try that next time I make this. Thanks for the comment.

Have you ever made it with much less milk in the batter, love relleno's with burger, onion filling, also one of my favorites is chicken and queso cheese sauce poured over the top an some inside with the other cheese. Thanks for many ideas, love the videos you do.👍👍👍👍

For roasting the chilis I use the air fryer and turn them once at 6 or so minutes. I just leave them in the air fryer until I am ready to peel. Makes this dish way easier.

The hardest part is just roasting and peeling those chiles. Next time, I'll have to buy those whole canned chiles for an even easier alternative. It's always good to have something you can whip up quickly when you're pressed for time.

3:26 - "Hatch" brand whole green chiles come in those same large cans at Central Market and some HEB stores in Texas. They would probably work well in this recipe.
That's good to know. Someone else commented that whole canned ones had a "briney" taste. I hope that's not the case with the ones from Hatch.

Well, the grocery store finally got in some poblanos larger than a jalapeno, so I cleaned them out! :) We have it in the oven now - not as pretty as yours, but it'll be good. Thanks Ms Marcy!

This looks amazing. I've made them before, but this casserole version is stellar because the pan frying step, each one individually fried in a pan full of grease makes the dish too heavy. I'm a big proponent of healthy fats like Lard and Tallow, but the additional chorizo and less grease make me 🎉 very excited to try this one at home. I'm 6 mo into ketogenic eating and this recipe is totally acceptable. 🎉 YAY! **So arevyou saying you prefer Anaheim peppers (?) Or, you prefer Hatch chilis(??)
