- Beef Stuffed Poblano Bake is a unique way to add heat to traditional stuffed peppers. Poblanos are a slightly spicier option than typical green bell peppers, but they're a tasty alternative. How spicy? Just right! A jalapeno pepper is five times hotter than a poblano.

Beef Stuffed Poblano Bake
1 pound Certified Angus Beef ® ground beef
1/3 cup long grain white rice
1 teaspoon canola oil
2 teaspoons kosher salt, divided
1/2 teaspoon cracked black pepper
1 small yellow onion, diced
3 cloves garlic, minced
1 tablespoon tomato paste
1-2 tablespoons chopped chipotle pepper in adobo (depending on heat preference)
1 teaspoon dried oregano
1 cup salsa
2 cups Mexican blend shredded cheese, divided
4 poblano peppers, cut in half vertically

Amazing recipe. My mom used to make stuffed green bell peppers all the time when I was a kid, which was her favorite, but I've never liked the bitter taste of green bells. Orange, red, and yellow are fine. I cooked a variation of this recipe for her using poblanos about 3 years ago. I added ground pork, chorizo, chopped green onion tops, and a touch of cumin, but overall it was the same recipe. She absolutely loved it. I make the same thing for myself quite often. Many times, if I can't find poblanos, I'll use the big jalapeño peppers, which are just as tasty, but a bit warmer. I usually add a bit of cream cheese, pepper-jack and smoked paprika to the mix on those. Damn, now I'm hungry. =)

I definitely agree with preferring the sweet crunchy yellow and orange peppers... red peopers if nothing else though. but absolutely NOT bothering with green bell peppers... I will try the poblano bec they are not devilishly hot...

I had everything prepped and ready to be cooked for this dish with the exception of the rice. Instead, I riced some cauliflower and my wife finished up the dish! My wife doesn't like peppers so instead, she roasted up a potato and topped it with the meat and cheese! It all came out amazingly delicious! Thanks for the awesome recipe!

Really nice demonstration of the basics. What's so fun about making these is there are infinite ways to do it. I usually grow at least two poblano plants in my Garden each year. My favorite way to stuff them is with my homemade elk Italian sausage breadcrumbs and gorgonzola cheese. But I'm definitely going to try the rice now instead of the bread crumbs. If you're trying to introduce your children to a little bit spicier food I would just lean on the pablano and leave the chipotle pepper out. By the way Chipotle pepper is just a jalapeno pepper that was allowed to stay on the vine long enough to turn red and then smoke roasted.

We are overly blessed with the Poblano Pepper. I have no idea how that happened, the tags on the plants said Jalapeño none the less we're blessed and have never had them. Tomorrow I'll harvest a few and this is what's for dinner tomorrow. Thank you for such an entertaining way to prepare my huge mystery peppers. P.S. We have never eaten Poblano Peppers so this will be a treat.

Followed most of your recipe except that I put extra Chipotle peppers, used a homemade Chile Guajillos salsa, and used Mexican rice. Great combo of ingredients!!!

I think if I were to do it again, I might pre-roast the peppers a little by themselves say for 15 minutes or so, then throw in the beef / crumble for another 15 minutes, then add the cheese in the last few minutes. The Beyond Meat was as good as beef - so it makes for an EZ meat alt food. Normally I would have used Vegan cheeze, but my girlfriend and her daughter aren't crazy about it so I used real cheese.

I could be wrong, but I believe that is just the coloration of the plate. There is no sauce on the plate.
My son was upset I didn’t make the Chile rellenos. But these were a great fix quick and easy substitute meal.

I cut a few bell peppers laid them on the side and filled them with ground turkey, tomatoes sauce, shredded cheese (pizza blend) and topped with sliced black olives and pepperonis and I made a stuffed bell pepper pizza

Because some recipies peel the skin off before earing.
When I cook these I don’t take off the skin and there’s no additional flavor or texture from it. Hope I helped.

Simple basic foods, easy to prepare, reasonably inexpensive... cut the cheese in half and serve with 2 or 3 side dishes of vegetables and its even nutritionally sound.

Right now the poblano peppers were on sell at the grocery store. Now i know what to do with the ones I bought.
Chilles poblanos look good, I probably try to make them skipping and the eggs.

You can skip that step, but you will miss out on a lot of that roasted flavor.

The plate is empty. It's just the color and glaze of the plate itself. I was looking at it, too, and thinking that there was liquid on there until he put the pepper on for the taste test.
