I put the 2 halves back together, then wrap in bacon. So I can flip them over on the grill to get the bacon nicely finished all the way around without the insides oozing out. Great video, definitely got some new ideas of how to do them.
I've discovered I like my poppers with a softer skin on the jalapeno. I'll actually blanch the jalapenos by boiling them in water for about 8 minutes. My other peeve is when the cream cheese oozes out. I solved that last time by using a muffin tin to keep the jalapenos more or less upright (I core them whole and use a pastry bag to inject the cream cheese). At one time I had bought a special rack to hold the jalapenos upright on Amazon, but that got lost a while back. I love your idea of adding back in some of the pith and seeds to add spiciness.
I haven’t had them in years, but I love them! I used to order them at a restaurant & they came with a raspberry dipping sauce. OMG! The perfect marriage of flavors!!
I do them like this sometimes, but sometimes I also like to add either corn meal or bread crumbs, and/or a bit of beaten eggs to the cheese mix. It helps them be more "filling", as well as keeping the cheese from oozing down to the bottom of your grill. But I do all of what you do for the BEST poppers. You have to season the cheese mixture and bacon is a MUST! Great video, thanks!
I love makin these. You do them very similar to the way I make them. I also put the seeds and pith back in the cheese. I like mine pretty spicy, so before I wrap them with bacon, I give them a good dusting of Reaper or Scorpion powder. I've watched a bunch of your videos today and enjoy them. New subscriber here. 👍👍

I make a slit down the side, pull seeds out (leaving the membranes), stuff with filling, then use wood tooth picks to hold the slit closed before grilling or baking. Sometimes I dip them in batter and deep fry for extra yummy!

Just mixed hot sauce and ranch for quick dipping. Man just had idea. But gotta take pan off😂🤣

Well, smoking cream cheese ahead of time definitely infuses the poppers with that smokiness. So yeah - give it a try if you'd like to!
for bacon as thick as you are using, I usually drag a knife backwards to stretch it out and make it thinner, the bacon cooks much quicker that way.
