I would love to see smoked stuffed mushrooms. I make seafood stuffed and a veggie and chz stuffed mushrooms,but always in the oven,so it would be cool to see how you would make them on a smoker.

Brad this is exactly how I make my poppers. On the half shell, make a cream cheese spread. I add green onions*. I like leaving them naked for a roast Chile type thing, I’ve never rewarded in bacon but I will now.

maybe consider that beef shoulder cut lerroy and leuise had once, I believe it is basically the flat irons without being cleaned up (shoulder top blade roast ) if you do try making it, have an experiment, cook 2, one with the fat cap, and one without, I personally remove it because of all of the connective tissue underneath it
Check your international supermarkets! We found on in our area that constantly has them this size for about a dollar a pound. That is all I use. The chain stores have these little dinky size for 2-3 a lb.
Throw a little smokey or a quartered sausage on top of the cream cheese before wrapping with bacon and you get yourself a nice little moose knuckle. Delicioso.

You should use Everything Bagel seasoning on the cream cheese and smoke it like that. It’s great all by itself.
