"Is canon" means it officially happened in the story. Basically he's in disbelief that something so absurd actually happens in the context the real story of the Jake and Amir series, rather than it being like fan fiction or something. Vader being Luke's father is canon, Vader being Luke's dog or something, is not canon.
Adding onto the other comment for clarification if you aren't an English speaker. Chewbacca dying is a better example. Canononically, Chewbacca has not died to my knowledge. However, there was a book written by someone in like the 90s that described his death. Currently, that death is NOT CANON. It is canon that Chewbacca is still alive.
To add to both of the other comments, when something is "headcanon" it means that it might be possible. It has not specifically been proven false, but also not specifically proven true.

Though fan fiction is written about an existing work and uses the characters/universe, the events in a fan fiction exists outside the context/reality of the official work. Conversely, if something is canon it means it does officially exist within the universe of the work. So amir saying he offered a conjugal establishes that it's a part of the Jake and amir canon ("it's canon") thay he downloaded part of an episode of a podcast then went to try and have sex with its subject in jail.
@@beclops I am still a bit confused, I mean, since they make the episodes, I would expect everything to be canon, right? so I'd like to ask to all the people in this thread: what's NON canon in the J&A universe? the only debatable things I could think of are: 1. the deaths of Rosie, Amir and Rosie again. 2. that fan made scroll episode with the stone tablet, the one whose script they read on cam (or is it canon?) 3. the Fired movie 4. the ghost of Leronn-uh
