For this #seafood recipe you'll need..
5-7 slices of kingfish
1 tablespoon Caribbean Green Seasoning
3/4 tablespoon sea salt (divided)
3/4 teaspoon black pepper (divided)
3/4 cup all-purpose flour
2 cups veg oil
2 large onions
1/2 carrot
6-8 pimento berries (allspice)
2 cloves garlic
1 scotch bonnet pepper
bell peppers (assorted colors)
1 1/2 cup white vinegar
2 tablespoon white sugar

My brethren Chris,! this is top of the chart!!! I love king fish & escovitch fish, never seen king fish used. Thanks for this great recipe, I hope to find whole king fish at the Asian seafood market I normally get it from, this Lent to make this dish for my family. King fish is rear out where I live & find it on occasion at this store. I certainly will send you pictures when I make it. I was expose to king fish ( with boiled bread fruit) years ago on a trip to Saint Lucia and started using it a few years ago. I love it, it is a very tasty fish with less bones to contend with. Thanks so much!

I've never had Kingfish but I will see if it's available somewhere. I love this dish because it really focuses on the majority of the fish!

Hi Chris I tried the fish in it was the bomb 💣 😂 I saw you put a cup of vinger but in The description 🎁 you said a cup and half. Which is correct
Great video Chris thank you. Don't think I've seen kingfish here in the UK, well not in Birmingham anyway, but that fish looks exactly like what we have here call Colley, its a large silver/grey fish. Can be sold whole or cut in chunks/portion like yours. I usually have mind cut in chunks. We can get here in Birmingham Bull Ring Market (if you've heard if it) Snappers, Baracuters, Dr Fish, Gar Fish, Parrot Fish, Jacks, Sprats, Red Mullet, Mackrell all sorts that we get in the Caribbean, some names escapes me at the moment. But most commonly to the English palate are Cod (mainly used for the great British meal Fish and Chips) Hake, Place, Haddock, Pike, Tuna, Red Bream etc, etc ( Red Bream is my favourite, when I can afford it) as Easter is near, I'll try this recipe on Good Friday. Another great recipe. I watched this other channel where the chef says escovitch fish must be cooked and "soaked" for almost 15 hours and sealed tight in a container, is that true? I like the way you do it, Chris.
well, that can be disputed, but I'm not trying to start any bickering. Additionally, if that is how she does is and grew seeing it being done like that... one can't argue with recipes and how one does it to their liking.

We do not have Kingfish where I live. What other fish can you substitute for the Kingfish?

King fish is best to use. And I mean REAL KING FISH not the fake ones they try to sell you.
