My mom used allspice berries on beef stewed and beef soups but not everyone likes it. I personally think is delicious. Love it! I’m pretty sure t those allspice berries on the rice i super delicious too. I would love to try it next time when i make my rice and peas.

Good morning, I love your son, he’s learning to cook like his great dad. Lol. I’m a Jamaican married to a Trini and, I put a little browning in my sauce before I added the rice and so, it ended up not white but nice and brown. Again love your son he’s telling you that the food smells great.

Absolutely mouth watering and delicious! So simple, easy and yummy! This meal is grandma approved. We Trinbagonian love our garlic, pepperand bandhania in everything and especially making that sauce. The baby so cuteee, don't apologize for him laughting and talking, he is a beautiful baby! Love how you stay close to your Trini roots in your cooking style and humble as well. When my brother was in LONDON,,to collage, he & a visiting friend went to this restaraunt ,,the had RICE &nPEAS, but when it came there was SERIOUS LAUGHTER,, WHY ? The PEAS WERE GREEN PEAS, NO BODY IN ANY ISLAND EVER USED GREEN PEAS , we use gungo peas ( pigeon peas ), , I guess I would have had a great belly laugh too, what the hell, !

I make my own jerk seasoning cause I can control the amount of heat from the Scotch bonnet peppers I add.
I think I'll try your marinade for the pork next time.

Having lived in south Florida for many years and eating black beans in spanish restaurants I decided to try it in my rice and peas instead of kidney beans.I am now a huge fan and I would love for you to try it as well if you haven't done so already.I use the canned black beans.😋🌴
