For this fired fish recipe you'll need...
2 snapper fillets (about 1 lb)
1/2 cup all-purpose flour
1 tablespoon Caribbean Green Seasoning
1/4 teaspoon salt
pinch black pepper
2 Scallions
3 sprigs thyme
zest 1 orange
1 cup orange juice
1/4 teaspoon salt
thick slice of ginger (julienne)
1 clove garlic
1 tablespoon veg oil
1/2 scotch bonnet pepper (no seeds / optional)
1 tablespoon brown sugar or honey (optional)
4 slices of orange

Lovely as usual Chris and just in time for Easter!. I'm sure this would work well with Mahi Mahi fillets as well? I may thicken up the sauce with 1/2 teaspoon of cornstarch 1/2 teaspoon water slurry. Don't want to lose any of that delicious sauce! Keep creating. We'll keep watching

Yes looks nice will try..may thicken sauce a tad with cornflour like post below said.
Make sure to mix the cornflower with hot water or stock first. It can be hard to dissolve.

+Rich Ross Olive oil can burn if you get it hot. In general, if you are going to really fry something (potatoes, breaded chicken, breaded fish,...), then you should get a heat-safe oil. I always have extra virgin olive oil, but I also have unflavored peanut oil for frying. I think sunflower oil is good for high heat as well, but I am not sure.

The worst is grouper. I adore grouper, but it costs a fortune. Up here halibut used to be a staple, but now it costs a fortune.
These fried recipes always look so good but I don't like wasting so much oil for frying. Great recipe though
I reuse my oil for fish and chicken. Strain it real good and you can reuse it several times like restaurants do with their deep fryers.
+otis ellis Reusing oil is never a good idea. Reused oil makes the food darker than normal.
This is really not advisable. There are health risks.
seygra20 tell that to every major restaurant that uses a deep fryer. They don't recycle the oil for at least a week. It's not a health risk to reuse cooking oil. Frying kills all the bacteria.
