    Thank you very much for the trouble you have taken to educate people about preparing and consuming curds .
    May I request you to kindly give me following information:
    When you said "lassi" did you mean buttermilk as well because if I am not mistaken, there is a difference between the two. I take buttermilk churned with a wooden churner , while having vegetarian lunch.
    Further, could you please enlighten me if it is healthy to use buttermilk to ferment dosa batter instead of using urad (black gram) dal .

      Lassi is traditionally butter milk as you rightly said and today's time in restaurant it's simply churned with that thick buttery surface layer.
      Yes you can use it to ferment dosa but use little older batch that is sour to taste. That will ferment dosa faster. Add on like sugar or urd dal or any other atta - their logic is they provide simple bacteria sugar to make nch on and grow that is to accelerate fermentation process.

      Could you please post one video on making ghee the right way that is by heating the butter extracted from yogurt because some people use shortcut to make ghee by heating the cream collected over a few days without souring it.

      Dahi with its probiotic effect helps to align the gut brain hormonal axis in which many of the neuronal hormones are made at the level of large intestine with help of these microorganisms called microbiota.     Thank God, I do not mix anything with curd. Earlier I used to eat raita a lot however now I've quitted raita and shifted to curd on a daily basis.

    आपने दहीं के साथ 50 % पानी मिलाकर सुबह में लेने के लिए कहा है और चाहो तो दिन में बिना पानी के भी ले सकते हैं , इसका मतलब यह हुआ कि वास्तव में पानी के अलावा दुसरा कोई नहीं मिलाना चाहिए , स्वास्थ्य के दृष्टिकोण से इसे डायलुट करने के
    लिये केवल मात्र पानी ही उत्तम है । क्या गुड़ मिलाकर सुबह में लस्सी बनाकर नहीं पीना चाहिए कृपया बताऐं। धन्यवाद।

      गुड़ भी चीनी का एक प्रकार है। अगर आप खूब शारीरिक मेहनत करते हैं और आपको शुगर नहीं है तो आप ऐसा कर सकते हैं उर्जा के लिए। ऐसा करने से प्रोबायोटिक् लाभ कम या नहीं मिलेंगे। कभी कभी आप गुड़ के साथ लेते हैं तो कोई दिक्कत नहीं है। धन्यवाद।
