Pav Bhaji Crostinis | A Classic Indian Street Food with a Twist

  • ✨Ingredients
    A loaf of your favourite baguette, sliced
    2 large potatoes, boiled and cutting into cubes
    1 red onion, finely chopped
    3-4 garlic cloves, grated
    A small piece of ginger , grated
    1 tbsp oil (any neutral oil works)
    1 tsp cumin seeds
    A pinch of asafoetida (hing)
    2 green chillies, chopped
    1 tbsp curry leaves, chopped
    1/2 cup green peppers, chopped
    1 carrot, chopped
    1/2 cup green peas
    1/2 cup chickpeas, boiled
    Salt to taste
    1 tsp red chilli powder
    1 tsp coriander powder
    1 tsp dry mango powder
    2 tbsp pav bhaji masala
    1 tbsp tomato paste
    1/2 cup water
    3-4 cubes of salted butter
    Handful of fresh coriander leaves, chopped
    Olive oil as needed
    Mozzarella cheese as required
    🌿Garnish:
    Some finely chopped red onions
    Coriander leaves, chopped
    1 red chilli, chopped (optional)
    Hibiscus glaze (optional)
    👉 Method:
    To prepare the bhaji, pour some oil in a pan. Once heated add seeds along with hing and allow the cumin seeds to crackle. Then add grated garlic and ginger and cook until fragrant. Now add chopped red onions, and cook them until lightly pink in colour. Add green chillies and curry leaves and sauté for a minute or two now add all the vegetables and chickpeas and cook for 3 to 4 minutes.
    Now at the boiled potatoes, give it all a good mix. Add all the dry spices as well as the tomato paste and stir well to combine. Pour in some water, put the lid on and cook the bhaji for 15 to 20 minutes on low heat.
    Now add some salted butter mix well and using a potato mash, mash the bhaji until smooth. Sprinkle some fresh coriander leaves on top, mix well and the bhaji is ready.
    Now line the bread slices onto a baking tray, drizzle some olive oil on top and pop it in the oven for 5 to 7 minutes at 375° until golden. Once the bread is done remove from the oven top off with generous amount of the prepared bhaji, sprinkle some grated mozzarella cheese on top and then pop it back in the oven for just a few minutes until the cheese melts.
    Remove the crostinis from the oven, garnish with chopped red onions, coriander leaves and red chillies. Finish it off with a drizzle of hibiscus glaze and it is ready to serve.
