Don't be fooled, in Italy we don't use Parmesan Cheese, we use Parmigiano Reggiano or Grana Padano (the one in this video). Parmesan Cheese is the generic name of similar cheese made outside of italy not the real one we use and produce here in italy.
Parmesan is just English for Parmigiano, Parmesano is its Spanish translation. It's still stinky cheese, who gives a shit other than Italians.

@@addar surely. this Antonio is in some Naples province, his accent isn't totally napolitan. Also, he does some variation of the classic recipes for pizza and calzone, it seems. The fried calzone is, though, a napolitain specialty, always liked as street food. normally filled with ricotta and sausage, or mozzarella and baked ham. the filled crumpet is an original version too. as it's literally a calorie bomb. fried over fried. a potato croquette enveloped by raw ham, provolone and closed into another croquette batter. probably your liver would do boom after the impact
the filled bread, sure. almost all vegs with some local producted (they own a cheese factory) mozzarella. plus that sort of roulade with what i think is some other cheese and a bit of green sauce (pesto)... beh not bad at all...
the parmisan spaghetti is a specialty born in Rome, actually they were maccaroni. but with the latest use of spaghetti pasta instead, and the flashy cooking in the parmisan piece as you often see in videos (or in the restaurants), the dish was renamed Fettuccine Alfredo... it's a great dish, greatly appreciated there

he rolls the sandwiches in paper - you only unroll enough paper to bite the bit at the top - the rest of the paper keeps everything together. it's the same principle as pitas and doner kebab and all other sandwiches made with small pieces of filling

Guillaume2606 I said the real authentic one, I did my research the real original one has a specific recipe from Italy , and their law is if not that they call it Parmesan cheese.
Actually they're two different types of cheese, Parmigiano Reggiano and Grana Padano; the first is from Emilia-Romagna, the second is from the Po Valley. They are quite different in flavour, grana has basically a salty note which is more intense than the parmesan, but parmesan has other qualities in taste which grana doesn't posses. Simply, they're different and both good. Then there's also another cheese which is famous here in Italy which is Pecorino, who has both Sardinian and Roman paternity. It's fairly used in typical italian dishes such as, for example carbonara and cacio e pepe, but also in many other typical dishes from other regions of the country.
P.S. Anyway, I've never seen that way of cooking pasta with grana or any other italian cheese, but maybe that's just me. Now I'm curious.
@@jothingvlog2216 You mixed up two things: ONLY the cheese from the areas of the provinces of Modena, Parma and Reggio Emilia (plus parts of Bologna and Mantua) may bear the name parmesan. GRANA PADANO is not from one of those areas so it's not allowed to call it Parmesan. But Parmigiano Reggiano as well as Grana Padano are both exported all over the world.
