  • Traditional cheesemaking at a sheepfold from the region of Bucovina, North Romania, from start to finish. The curdling process is done by adding lamb rennet. After curdling, whey is boiled to obtain 2 traditional Romanian cheese delights, jântiţă, and urdă.

    Urda from romania is just amazing . i am not a cheese fan in general but that is just the most delicious thing in the world. if anyone goes to romania visit the happy cemetery in Sapanta and right next to the entrance some village ladies make urda pies . omg . life changing

    Как же я люблю овечью брынзу свежую. А солёную либо с сладким чаем без хлеба, либо с хлебом и помидорой. Уже лет 12 не пробовала даже.
    Мы такими большими марлями не пользовались. По одному килограмму много вешали на бельевую верёвку, а капали сыворотку прямо в поилки куринные. В молочных флягах в солёном рассоле брынза хранилась. Немного излишки мама продавала знакомым. А вообще семья у нас большая. У четверых студентов брынза ку малигуца была основной пищей.

    Urda e m-ai cremoasă și dulce dacă se pune si lapte când fierbe (vacă s-au oaie) La caș laptele nu ar trebui sa il separați in vase multe sa nu se răcească😋

    yes i agree that the best cheese were produce in Romania it is done in a very modest traditional way and the process is the best bcoz its from the basic .. how i wish to have the cheese likewise here n my place .. GOD BLESS PEOPLE OF THE COUNTRYSIDE IN ROMANIA -TRANSSYLVANIA .

    It warms my heart to see these men working side by side, helping the women with cooking chores. This looks like back breaking work too. God bless them. The sheep and farming all look very healthy and well managed. I try to cook from scratch as much as possible using local foods and my own garden produce. It's very satisfying work

      I'm not implying that the women are lazy, oh heck no! Ive raised 7 kids , raised gardens, canned foods etc. A women's work is naturally hard and "is never finished" as the saying goes. The men here are obviously awesome team/family workers. Many other cultures have traditions that work the women to death and the men laze around and treat the women harshly. THIS here looks vastly different. Please don't take offense when none was intended. ;-)

      You know so little!
      They go in spring with sheep and will stay until autumn (fall) on top of the mountains at green pastures.
      Most of them are men
      That is not cooking it is a modality to make the cheese, that they will sale

    Wow so much milk! I have 2 goats I milk and get only a fraction of that amount. Enough for our family, we live on the coast of British Columbia in canada. Amazing to see these guys work and it is so true they are healthier because of the way these sorts of things are made. Raw, fresh, real, bet it tastes awesome. Just made a fresh batch myself can't wait for it to be done. Thank you for sharing this experience with us.

    I ate some this evening , real cheese made in the Apuseni mountains in Transilvania.The French most likely wouldn't appreciate it that much ,as they love more maturated cheese and have many variations ,but this is good and healthy ,home made is the best money can buy !

      Somnivers Yes the French like their cheese far too aged (and even moldy) for me. Mold can easily cause cancer. How I wish I could taste this Romanian cheese!

    I love to see villagers cooking with firewood. even their boiled water has slightly smoke taste in it. really delicious. compare to that, cooking with stove result in food with bland taste. also waiting on side of the pot, watching at the dancing fire strangely warm my heart.

    Have made my own cheese for decades. The urda, seems to be similar to ricotta . If so, this must be delicious as sheeps milk hold far more fat than most other milks. I'd love to use sheep milk for most of my cheeses , however here in Colorado it's about 16.00 a gallon.

      Begin with going offline. Not for 5 minutes or days. For your entire life. Than disconnect from the electric grid too. Give up water from the pipe and bath 3 times a year (Christmas, Easter and when you visit a doctor; wait doctor maybe once in 5 years). Wash your clothes in the river. And so on. Nobody stops you!

    This is similar to how my family did it in Banat, Serbia. My great grandmother had the exact technique to how they did it, and told my cousin.

      Primavara din laptele muls de la oi stiu ca se face urda..apoi casul toata vara este preparat..dupa care branza de oaie propriu zisa care se pastreaza ceva mai mult decat primele doua produse

      Traditionally it was made from the stomach of a lamb or calf that wasn't weened.

      No, that was caș. Then urdă, from a different protein than casein > caș (cash). Then the caș is salted a little bit , some other process, matured and you obtain cașcaval / kashkaval.

    My family used to have a big trip to the northern mountains once a year, just to buy the freshly made cheese. It may not look appetizing once you see it made, but it's really good. The taste and flavor can't be matched by the factory-made you get in the stores. Sadly it gets harder to find (and alot more expensive), because most people abandoned sheepherding, for obvious reasons - why would you care for a bunch of stinking sheep and sleep in the cold, when you could have a comfy job in the city, sip on cofee and comment on your laptop?

    Wonderful. I wish you that you showed us the end product. What happened to the cheese after boiling the whey? How is the cheese packed and what is the life of the cheese?

      life for this cheese is unlimited or until you eat it :) my grandmother used to make chease from raw milk and getin older cheese is much better...if anything start to grow over the chease you simply cut it down and under it cheese is in perfect condition.we keep cheese in dark rooms with low humidity and constant temperature over the year

    My mom makes the cheese very smilar way. She doesn't pasteurized and people over there live long and healty. Because we have that strong immune system. Loves from Turkey ;)
    Edit: We don't pasteurize for making cheese, fermentation is taking care of it and of course we boil the milk before we drink it. But guys understand what I am talking about. I lived in US, the milk tastes like shit. No flavor no benefit, they add vitamin d or omega 3 to make it something has benefit. The milk doesn't go bad in the fridge for a month because everything is killed inside of the milk. They don't even have pasteurized they have Ultra pasteurized, it's insane! Your body needs some bad bacteria also to grow the immune system. I didn't know what allergy means until I lived in US. The expensive cheeses in Turkiye or Italy still don't get pasteurized.
    I respect everyone's opinion but believe me you don't know what real milk or cheese is if you live in US. Sorry
