I am 81 years old. Born and raised on a farm in Lincolnshire England. From an early age I helped at milking time, cows, cooled the milk on a water-cooled radiator type thing. Turned the handle on a mechanical centrifugal cream separator, once a week we put the cream into a wooden butter churn and turn the handle until it formed into butter, sometimes quickly, sometimes a few hours. Helped, 'patt' the butter into blocks. Very occasionally helped make cheese. It was so interesting to see how other country folks did a similar task, the tools they used too. Nowadays I buy my "butter " from the local supermarket, no doubt made by computer.
@@Peasantartcraft No. My Father died aged 50, everything changed in life. I was 18 years old. My father and I also shared an interest in motor cycles. Eventually I married and after some years my wife and I opened a small business buying, repairing and selling motor cycles. Eventually sold everything we owned and retired to Spain, live in a small simple wooden building . Live simply but happy and contented with my life. Living the farm life for my first 18 years made me the person I am now, no regrets at all.

In Romania only old people keep this thousands of years old Romanian traditions alive. Soon all these amazing crafts will be gone, will be extinct. The young people do not want to work like this. This kind of cheese has been made the same way for thousands of years (there are archaeological discoveries to prove it). I found an authentic one once and it was a joy, the taste of this mountain cheese is a joy in itself. This summer I must go to Moldovita, Bucovina, Romania for sure, to get this amazing cheese, while these old people are still alive and working.
We always buy a few kilograms and store it in brine and we have cheese and tomatoes all summer. The taste is different indeed, much better than the one we find în supermarket and more nutritious. Hurry up summer! Hurry up cheese and tomatoes 🙂

If I were a shepherd, I would need a large herd...otherwise I would eat everything I would make! The cheese looked so delicious...and the way of life, the tradition and the camaraderie of the shepherds seemed to be the reason the quality of the product was so high. It's a beautiful life but shepherds have big problems here in Romania because of bears. Their number is over 8000. Especially here in Transylvania they keep attacking the herds.

The tradition has been inherited from two thousand years ago from generation to another,I m lucky enough to see that process few times in my childhood, the difference between this and what I remember is that the sheeperds use to age the cheese in the pine tree skin.They use hand sawing technique and keep the cheese for few months ,the flavour is little bit sharp and bitter...... unique, fantastic.

Our great grandparents brought the knowledge, hopefully the family learned the techniques. They used processing that today we would consider unsafe...but guess what...they still lived through everything including the most serious situations of the early 1900's. Buy the old books, learn from elders...there is so much nutritional and medicinal information that is good!
