    Try adding strong steeped black tea instead of plant milk. It adds depth of flavor. ( From a 250 yr old New England recipe)

      Never tried that, but I've been using cold coffee in my baking and smoothies for years instead of milk.

    Molasses is the boiled down juice of sugar cane. (It holds all the nutrients)
    -the refined sugar comes from the crystals that form during that process (just sugar)

    I chilled the dough, dipped a metal ginger bread man cookie cutter in oat flour, pressed 2 tablespoons of dough in and made a whole bunch. It took forever and was totally worth it! Fun to dunk. Delicious. Thanks, Jill!

    Omg I just made these for my plant based four year old and I- they are amazing! I didn’t have fresh ginger so that was the only thing I had to omit but they were yummy! My four year old ate his then tried to steal mine! Thank you so much !

    These are amazing! I made them tonight and sat and enjoyed some fresh out of the oven. They are delicious and I will make them year round as well as definitely add them to Christmas baking list! I went wfpb on Dec 26, 2020 and I have to say your food is amazing and inspirational thank you!

I have made your apple pie about 4 times now and I like it better than any other apple pie I've ever eaten, including the kind with unhealthy ingredients. ❤️

      Really?? I wouldn't think it would taste good as molasses has such a strong and pungent flavor. I take molasses every day to help with my iron.

    I just made these cookies last night. Fabulous! I will definitely be making these frequently. It takes a very short time from putting together the dough and the finished product. It was made quicker by my use of frozen fresh ginger, so I didn't need to spend time chopping or grating fresh ginger. I also added a smidge of ground nutmeg to the batter. Next time I will increase the amount of fresh ginger plus use 1/2 of the oats without grinding and 1/2 of the oats minimally ground. My husband also loves these. Thank you for a great recipe!!

    I love to see the scraping of the blender, it always makes me cringe when I see somebody just pour something out and leave so much food Inside of the blender/bowl etc.

      Ummm...Don't they leave food behind to save on time? lol I thought EVERYONE ALWAYS scraped every last drop out of containers like I try to do. BTW I had a blendtec before I got a vitamix. The spatula that comes with the blendtec, works perfectly in the vitamix to get EVERYTHING out!

    I know what you mean about trying to recreate some recipe from childhood. I’m in my 70s and my mother used to bake a ginger bread. It has taken years to find the recipe. I had some very old cookbooks from the early 1900s and found one that closely tastes like what my mother used to make. Her secret was molasses and treacle but also grating ginger into the mix.

    I just found your channel and so glad I did! I just made these amazing cookies and yum! I had tapioca flour so I used that. I also love cinnamon and cloves so I snuck in 1/2 t. Of each.       Ps. Jill ...I’m a fan of strong flavors and I really like Blackstrap Molasses but I have tried using it to sweeten my coffee and 👎🏻...It’s too irony to be enjoyable with coffee alone. 🤨 ( But that’s only my opinion...so .)

    If you blend the coffee with a bit of soy milk & your molasses it should integrate well and taste really nice. Otherwise the molasses might make your coffee a bit syrupy (tried it :))

    I love ginger molasses cookies! I like making a morning drink of molasses, cocoa powder, and nondairy milk (soy tastes the best for this combo I think). So it’s like hot chocolate, but healthy! Dates is good in hot chocolate, but thry do make it more of a thick drink.

      Try carob powder as a substitute for cocoa powder. Makes an awesome hot drink with plant-based milk. No theobromine like cocoa, so it can be enjoyed in the evening without the stimulant, & naturally sweet...the product of the "locust bean" tree. Mmm

      @viviventure I thought so. Maybe my oats were ground too finely? I pregrowned them several weeks ago to have oat flour at hand. Also used the Mejool dates. I didn't remember her specifying in the video but saw later she recommended the others. I also prefer a sweeter cookie than Jill so I rolled in coconut sugar.

    Could you be thinking of the Archway brand cookies. They had flat red packaging. My favorite was their rocky road cookies. Do you have a healthy recipe for Rocky road cookies? ❤️🌿☮️

      Yeah! Mission figs would give more of molasses flavor, prunes could be worth a try too :)

    I made these cookies and love them. I forgot to mash the second (overflow) tray and did so when they came out of the oven. No sticking, still chewy, I think I'll always wait till they've baked to smoosh them now. It's less sticky.

    I wonder if you could modify this recipe somehow to become the crust of your pumpkin pie? I wouldn't know the proportions, but both recipes start out with almond meal and flax meal. Just add some ground ginger and molasses and milk or water. Erin Jeanne McDowell has a book on pie and makes pie crusts out of all sorts of ingredients. Some are healthier than others.

    I can remember buying Arrowhead Cookies, or maybe Archway, every year for the holidays. I haven't seen them in the last few years. They are Pffeffernusse cookies. They're my absolute favorite cookies, especially for the holidays. They're so moist, full of flavor and covered in powdered sugar. So, so delicious. Is that similar to the cookies you mentioned?

      That is what I modeled them after. It is kind of a blend if two different cookies, ginger snaps and molasses 😋😋😋
