Russian Crepes with Cheese (Nalesniki) - Natasha's Kitchen

  • Nalisniki (налесники), cheese blintzes, cheese crepes, blinchiki. It has remained one of the most popular dishes in our family for breakfast, lunch or a late-night snack.

    🍽INGREDIENTS For the Crepes Batter:
    ►½ cup lukewarm water
    ►1 cup milk
    ►4 large eggs
    ►4 Tbsp unsalted butter, melted. Plus more to sauté.
    ►1 cup all-purpose flour (you can use ½ cup whole wheat flour and ½ cup all-purpose)
    ►2 Tbsp sugar
    ►Pinch of Salt
    For the Filling:
    ►8 oz package cream cheese, at room temperature
    ►16 oz small curd cottage cheese
    ►⅓ cup of sugar
    ►¾ cup raisins
    ►Powdered sugar for serving (optional)

    My grandma was Russian so we always ate these on holidays..the filling was similar , she’d line them in a sour cream covered dish then line the crepes up and top with sour cream, then she’d put thin pats of butter on the top and bake 350 till golden..delicious..she would serve them with chilled pears..try them and let me no.

    Very interesting that you rinsed cottage cheese. Never thought of that before! Thanks. Here in the States where we live, we can't find the necessary white cheese that is always used in Poland for the filling. I have been using farmers cheese so far.

      You can make your own cottage My mom makes it herself and I only like her crepes that she makes. I’m about to call her now now so she can make some.

      I prefer her older videos. Shes a bit too hyper nowadays. I think her husband told her to take it up a notch to get more view but it's a bit much

    It leaves you with just the curds. Drain well. If you don't rinse and drain the cottage cheese, the filling would be too runny.

    My step dad made crepes for me as a kid. Similar recipe but for the filling he would warm up strawberry jam and pour that down the middle and roll up. Still my favorite breakfast

    a great comfort food growing up - when mom ran out of cheese she used apple sauce -
    I like my crepes a little thicker frying them to a nice crisp with saur cream and sugar or jam

    I have always done it with my Kitchen Aid mixer and totally lots more work (sifted flour, added gradually, then milk, then more flour, then water at end. Awesome way to do the dough in a blender. I will definitely have to try if it comes out just as smooth. So, cool. My kids (boys 7 & 9 yo) can already fry them on their own, with this blender way to do the dough they will be able to mix them too now and will do it all on their own. Can't wait to try it. Really good job on the video.

    My moms do doesn't use raises she doesn't use blenders she uses her spatula or whatever and makes it fresh. For the cheese she makes it really good

    We call them nalisniki or blinchiki in ukraine...

    "Palacinky" in Slovak. 🇸🇰 I remember my mom making them this way when I was little. Now I prefer them with nutella or jam and fruit. A great tip is also put some cinnamon in the batter. Makes them a new level. You get easily addicted.

    For the smartasses, NALESNIKI is another word for BLINCHIKI. The only difference between the two is that Nalesniki is Polish and Blinchiki is Russian. So STILL, it is a slavic food and exactly the same thing. All slavic countries eat this and even non-slavic countries, it is the same thing as crepes.

    We call them blinchiki...by the way I didn’t know people rinse cottage cheese kind of odd but ok. Anyways I just use more liquid cottage cheese, no cream cheese and I roll them differently, but this is a nice idea too

    Can you freeze these or will they be ok for 3 to 4 days in the fridge ?

      I do think that freezing would work fine. You might want to put layers of wax or parchment or plastic wrap between layers of cheese crepes so they don’t stick to each other when they thaw.

    It’s not russian, it’s ukrainien 🙁
    It’s true that they have very similar recipe but it’s still a bit different and it calls bliny... I really like your channel and enjoy a lot of your recipes but it’s been very disappointed every time when you call ukrainien or polish recipes russian ...That’s why russians are so surprised, they have no idea what does nalisniki mean

      I think Natasha referring more like “slavic” food, which means russian. We use term “russian” at home a lot, although I’m originally from Ukraine. In other terms, russian sounds more like former Soviet Union, СССР. At that time most people were speaking russian, even in Ukraine.

    7 ingredients just for a crepe batter 🤔😱 seriously not needed.
    Equal amounts of flour, egg and milk with sugar or salt added if you wish. Done
