Bengalees never make Payesh with Basmati rice. They make it with 'Gobindabhog' rice which is very aromatic. And that gur is not ordinary gur - but patali, that is from khajoor tree.
this is not a bengali dawat ..... with luchi we need aloor dum(dum aloo) / cholar dal(chane ki dal) / begun bhaja(brinjal fry) / kosha mangso(chicken or mutton curry) etc...... bengali dawat is not complete without rasgullas or rasmalai / misti doi. we cook payesh with a special kind of rice(special aroma) called Gobindo Bhog chal..... except that Sanjeev Kapoor just nailed it.

Sir, with due respect I just want to say that ,White mustards seed r not known as radhuni is different and white mustard seeds are known as “sadha sorse”... tadka mein “ panchfhorn” dale jate hai & if nolen gur is used in payesh we dont use elachi because the smell of the gur goes away ... I am your huge fan , you n my mum is my inspiration ... I luv cooking ... 🤓 please forgive me if I said anything wrong . 😔

In bangalore i use jeera sambha rice. It smells almost gobindobhog chawal. Awesome. N sure I use খেজুর গুড় আধা। আর চিনি আধা।
