I don't measure. I just put a drop or two until I have the right color. For beginners, I suggest using a teaspoon for measurements. You shouldn't add over a teaspoon of gel food coloring to avoid your candy apples from coming out too thick. I hope this helps.

I usually dip my apples the day of the event early, early in the morning so the customer will have the candy apples fresh. Thank you. Are you talking about the bubbles in the candy mixture inside the pot? With me I should wait to let the candy mixture cool off because it's usually still bubbling and piping hot in the pot. Those bubbles don't never stay on my apples. I usually never have any issues with bubbles unless it's up on the top of the apple after inserting my candy apple stick. That comes from the apple juice coming out the apple and needs to be wiped down before putting the apples in the candy mixture. If you look closely those piping hot bubbles rolls off before I even place the apples down on the parchment paper. If you have bubbles try to get a toothpick and insert it in the bubble to pop the bubble. I hope this helps.💗 If you are experiencing bubbles make sure you wipe your apples down really good before dipping them. I think you're looking at the shine spots from the lights on the apples.

I try to cut corners when I can.

I wouldn't recommend putting the candy apples "on" the refrigerator after packing them in clear plastic bags because on top of the refrigerator could be too warm. Did you mean putting the candy apples in the refrigerator? If so, I would only recommend putting them in the refrigerator if you cannot keep your house cool at least about 65 degrees. The candy usually doesn't boil over it usually goes down as it boils, but I understand not wanting the candy mixture to boil over. After you are finished dipping your candy apples make sure you clean your pot by filling the pot up with water and let the water boil on low until the candy mixture turns into a liquid formation.
Hello, Syrondia Hoskins. Thank you for asking. The 4-1-1 and 3-1-1 candy apple recipes are good general candy apple recipes that will get you about 7 candy apples in general. Those cany apple recipes will never get you 12-24 apples in one batch. I got tired of making candy in two different pots using the 411 and 311 recipes. So I had to experiment a little to get the candy to reach a minimum of 20 apples. This just saves so much time now. I hope I answered your question. I always use Butter Vanilla unless the customer asks for a particular flavor such as strawberry, watermelon, or etc.
