I canned 1 jar for juice last year. Just tasted it today and it was great. Planning on doing more. 1/2 cup sugar in a qt jar. 1 cup rhubarb. Fill with water and i pressure canned it. I made it like the grape juice.
My rhubarb has been growing for over 35 years 😉
We harvested about 50 lbs today! I’ve still got 30 plants left to harvest!! I’ve never thought about canning it. I freeze dry or freeze it.

We have a Rhubarb Fest the first weekend of June. I can rhubarb sauce and preserves. I freeze the rest for cake, bread, rhubarb upside down cake and more. I do make one strawberry rhubarb pie every year.

I miss rhubarb. My grandma used to grow it & I loved it because I love tart far more than sweet.

My Mom did also, typically for my birthday we would have pie, 1- Rhubarb & 1 lemon merange ❤
Make a shortbread crust put 3/4 of it in the pan and save the other 1/4. Mix one can of cherry pie filling with 1 and a 1/2 cups of rhubarb and a splash of almond extract and a pinch of salt. Bake the crust until light golden brown add the filling( no need to cool crust) and crumble the extra topping on top, bake until brown and bubbly.
We moved from Minnesota to Missouri and I was missing our rhubarb. I planted the Victoria variety, which I heard does better in warmer climates, and it’s growing and producing beautifully! We planted 4 in a big deep raised bed. I cut it back in the fall and use the leaves to cover/mulch it. Love my rhubarb so much! Thx Leisa ❤️
I only have 7 ruhbarb plants, but i always get 2 cuttings a year. I make ruhbarb and strawberry jelly, bread, pie and i can it.
I really wish I could grow this but it's to hot here in Florida I miss it so much when I lived in Wisconsin my father in law grew it so much it was a treat for this southern gal!!
I Live in the part of Canadian ware Rhubarb is prolific - not a dad problem to have. Great to know it can be canned. How many of us have that handed down recipe "Aunt Jane, she was lovely but her cooking techniques today my kill you 😜" I have a few recipes handed down - with what I know today, I have never followed one precisely. I can remember my mom making stewed rhubarb and we would have it warm over vanilla ice cream. Sooo good!

You just brought back so many memories for me. My grandma would can rhubarb sauce is what she called it and my grandpa would have a little bit every night after dinner it was his tangy Sweet treat. And today I made my dad his favorite pie rhubarb custard.

Seeing the rhubarb stalks brings back memories of my dad making rhubarb pie most summers when I was young and still at home in Upstate NY...we had a small garden in the backyard and grew rhubarb, tomatoes, bunny rabbits, and rocks! My dad was brought up in a small, rural village about an hour from where we lived, and he likely learned the recipe from his parents, who were both brought up on farms near his family home...
When I was a kid, my grandmother would make rhubarb sauce and serve it hot over vanilla ice cream. It was the best!
I moved in March to Kalamazoo and planted 2 bare root rhubarbs about 2 weeks ago and they have green leaves starting! Yay! I'm so excited! I think I'll order some another variety this fall or next spring because I just love it! Thanks so much for your videos, I've learned lots and stated canning after my move also! Love my new life!
❤ my rhubarb plant crowns were in the grownd for many many years before I married & moved to this homestead (2000). I've tried to move all the plants, to no avail. They still come up every year (I give up, so harvesting this week).😊

I put a stick of rhubarb in my borscht to give it a sour flavors. My Ukrainian grandmother always did that when she made borscht.

My parents used to make sauce out of it. (similar to apple sauce) They would cook it down and add sugar. We often had it with a meal.

Ha! Leisa, I have JUST this minute put my rhubarb and sugar to steep before canning it later. Try and keep the white part at the bottom of the stalk as that adds to the sweetnes. X

I live in central Kansas. I have one Victoria rhubarb plant. This is the 2nd year. It gets HUGE...about 4' wide, and very prolific. It's like rhubarb on steroids. I wish I had the red kind though. Victoria just looks like celery. But when I bought it everyone was out except for one nursery that had this.

The first rule of RHUBARB is never plant it. The second is WTF is it good for. The third is WHY. It is just red celery and taste funny. It requires a lot sugar to be eatable.
If it is canned, you only need one jar for an entire year. The partial jar, you could have just added more HOT water.
A pint of Rhubarb is the right size to viciously throw at someone you don't like.

You and I are definitely on the same wavelength. I planted 3 more rhubarb roots this afternoon. I love canning rhubarb sauce. My husband likes it better than applesauce, but I'm still making him eat all that applesauce. Not all this year. I'm not that cruel. I have inspected my apple trees and it looks like another bumper crop year. I'm going to still put some away myself but the neighbors are going to enjoy it this year.
Consider stretching and also sweetening your rhubarb with apple sauce. You can also make "pear sauce" (same as apple sauce but with pears, old school used to save bruised windfalls and those not holding well in thier dark cool spot) and use it with rhubarb. We never canned the mix.

Funny enough I looked earlier this week for rhubarb recipes and wasn't sure. Thank you Leisa. Yesterday I canned 6 pints and 4 half pints of ugly chicken. 😊
Mine are mostly green, thick & they get the big heads of seeds. I've been able to harvest them 3 times. I think ill be stewing them this year. They take up alot of freezer space. Thanks!
You can actually grow that in some parts of Oklahoma. I managed to grow a beautiful crop of bok choy and would love to make some chicken bok choy and mushroom soup. Just as soon as I can find an approved recipe. Don't know where I could find one, do you? Rhubarb/strawberry pie is one of my all time favorites!

Cook it down till its nice and thick, put in a jar in the fridge

Could you add water up to a half-inch headspace to the jar that was a little short and can it that way?
It would dilute it and likely alter the acidity

If you google rhubarb sugar free, you can find a ton of recipes that deal with a sugar substitute or are sugar free I needed to find out as I’m diabetic t2 have fun I did 😅

By gosh, rhubarb is a hardy perennial that if it has red stalks or ruffled leaves works pretty well in the ornamental garden too. If you lay wettened leaves over the soil surface it does a pretty good job of killing off weed seedlings and some ants too.
Leisa, do you know if I can use rhubarb that was frozen last Spring to do the stewed rhubarb? I have more now, but I'd like to use up what's in my freezer.

@@SuttonsDaze thank you for the response. My rhubarb patch is small and it takes a couple harvests to get a larger quantity making it worthwhile to can. For example, today I pulled all I thought I could to not over harvest and only ended up with 8 cups of cut up rhubarb. I know I can adjust the recipe downwards, but don't really like messing with that. Trying to keep it safe.
Did you know that the leaves -can be put in a blender with water and after straining you can use it to spray on your plants to keep aphids off-and it appears to be fairly residual. It kept aphids off for over a month at my garden. There is a RUclips video on it

I grew it for my husband (now he & the rhubarb are GONE. LOL

It's too hot here in the Piedmont of North Carolina to grow rhubarb as a perennial. Rhubarb requires at least 500 hours of winter temperatures between 28 and 49 degrees for plants to go into rest period and produce an adequate amount of new leaf buds

I have rhubarb plants that needs to be split. I'm afraid to do it because I don't want to kill it.
I had 4 big plants. Last year I took half for friend. Looks this year if I had done nothing.
This year I took half of another plant. Yes I did add compost and lots of water. Looks almost the same. The roots are bigger than carrots and hard to cut.
Just try if you want to give or create another plant.
