How to Can Rhubarb Jam

- Get the jars and water bath canner ready 'cause it’s canning time! Rhubarb is the first thing ready in the spring. I love baking with rhubarb, but this jam is the best! It's full of rhubarb flavor with just enough tartness to balance out the sweet!

Ingredients:
- 4 lb rhubarb
- 3 cups sugar
- 1 1/2 tbsp lemon zest
- 3 tsp orange zest
- 1/3 cup lemon juice
- 1/4 cup orange juice
- red gel coloring
Instructions:
In a large heavy-bottomed stockpot, combine the rhubarb, sugar, lemon zest, orange zest, lemon juice, and orange juice. Bring to a rolling boil over medium heat. Keep at a low boil, stirring occasionally for 15 minutes.
Remove from the heat and strain the juice. Reserve the rhubarb. Return the strained juice to the stockpot and cook until the temperature reaches 221°F.
Once at the correct temperature, add the reserved rhubarb back to the juice and return to a boil. Cook for 2 minutes just to heat the rhubarb.
For canning: Immediately pour the hot jam into warm sterilized jars, leaving ¼-inch headspace. Wipe the rims of the jars with a clean cloth and add the lids and rings according to the manufacturer's instructions.
Boil in a water bath: 10 minutes for 8 oz jam jars and 15 minutes for pint jars. Remove from the water bath and cool on a rack for 24 hours before removing rings. Store for up to one year.

Good morning and Hello! Just from my family experience in making jams and preserves, the high sugar content also helps to preserve the jams, etc, etc. Yes sugar can help in the preserving process, hence the high amount of sugar in recipes. Love your channel and content!

Rhubarb is by far my favorite this time of year. We used to make rhubarb and strawberry jam leaving enough texture to identify what you're eating. We did use a pectin additive instead of the citrus to make it set.

I made this jam today, as written, except I had red rhubarb so didn't need to add the food coloring. The consistency was absolutely perfect. The taste was too citrusy for my liking, so next time I make it (and I definitely will), I will reduce the orange and lemon zest in half. The citrus rather overpowered the rhubarb. Great recipe overall, and easy to do! Thanks for the very helpful tutorial!
Might want to consider adding in some pineapple. It's also acidic so it can replace the missing lemon/orange; and it compliments the rhubarb flavour perfectly.
I love rhubarb. I am so happy that you added the orange as that is my favorite! When I make strawberry rhubarb pie, I prefer more rhubarb with just enough strawberry for some scent.
It also gives you color instead of using food color.

Just saw rhubarb last week at the market. Now I need to make strawberry rhubarb jam! Springtime in Florida starts the canning season first of the oranges, next the Plant City strawberries. First crop of corn, Ruskin tomatoes and what else goes on and on and on. I'm a senior with a $70 a month budget for food grab it fresh at Peak and inexpensive.

My first year of making rhubarb jam today. Made 9 jelly jars, now praying they all seal. Had some left over rhubarb, 1 3/4 pounds, so I froze it. Can I use the frozen rhubarb when I get more to make rhubarb jam? I know I'd have to let it thaw and drain the water off.
All I find is frozen one would that make a good jam?

That is some shoddy looking rhubarb.
Oh this is an easy recipe. Cut up rhubarb on a incredibly expensive wood cutting board. Pick up said cutting board and walk over to the flip-top motion sensor trash can and scrape every tiny bit of colorful nastiness into the bag. Clean cutting board and knives. Viola! It's magic.
