I was helped clean out my daughter’s FIL home after he passed away. He was a world traveler and loved Asian culture. I found a Japanese knife with a broken tip and a handle that was cracked. My guess is 50+YO and it’s hand forged as the tang looks like the one in the video. I asked if I could have it not knowing anything about knife restoration. I have the repaired and cleaned the blade but I have been struggling creating a new handle. I have watched multiple YT videos and this one seems the best for my situation. I am currently working some walnut to the oval shape of the original handle. Taking my time. I am nervous about making the rectangular hole for the tang. Hopefully all will go well. I want to gift the knife for my son who spent several years in Japan and just returned to the states.
出刃包丁: 魚を捌くための包丁。主に頭を落とし、腹裂き、内臓を取りだし、身と背骨を分離するための包丁です。 Deba knife: This knife is designed to fillet the fish by dropping the neck. It is heavier than other knives to cut fish bones. The shape is wide and thick, and many have a fairly obtuse-angled blade at the edge. There are various sizes, and it is used properly depending on the object to be used. Deba knives of a size that does not fit the target are rather difficult to use. Small and thin ones are also called Ajikiri knives. Generally, it is a single-edged blade, but depending on the region, there are double-edged blades, blades with a smaller width, and blades with a wider cutting edge.
I almost forgot You did this kind of videos too. Also work that requires a lot of patience, I would've just de-rust the blade then sharpen it and be happy :D Good job!
Single bevel Japanese knives have one seemingly flat side that is really concave, and one side with the bevel. The bevel is meant to cut away from the user, thus the knife in this video is for a right-handed user.
Electrolosis isn't that quick. It also causes Hydrogen Embrittlement. A wire wheel or a couple passes on that belt grinder would've sped things up immensely.
How do know if the steel is worth the effort? Can you read the old maker’s mark stamped into the blade? Or are most old knives good steel and it’s only the newer stuff from the 80s 90s that is too cheap/hard/brittle to keep a great edge?
Most older knives were made with care, especially from Japan or west europe. So if it fits the timeframe, worth giving a go. If it's a simple non-stainless steel, you can re-heat treat the knife with relative ease yourself if you don't know if it's going to be good enough.
Why didn't you show us the finished handle instead of just cutting up a bunch of paper? Nice restoration but think a little more about the editing of your video.
Как раз кольцо на рукоятке и нужно для того, чтобы удерживать хвостовик ножа. А он расширил отверстие потом ещё и двухкомпонентным клеем клеит. За это я бы второй дизлайк поставил.
Not sure how to feel about this...... If you are going to go through as much as you did, the least you could do is get the pits out of the blade completely, Via Wet sanding and polishing You go through what you did to show how sharp ??? it was by cutting some paper ??? As if that was some GREAT feat, The least you could do with knives like this that are Signed/Stamped with the makers Mark is get it looking like close to new , and to freshen up the-engraved signature again and make it look better. Now if this was just some pen knife you bought at a flea market so be it, But it is a Stamped/Signed blade. Honor the maker and make it look to as Close to NEW as you can

Nice knife, it was good to see the rust didn't ruin it too badly and the original markers mark was still intact. :)

Brilliant job 👍 thanks for sharing your work. It's always exciting to watch. Well done.
Great video brother, but I would need some food grade mineral oil on the knife handle so the wood will last longer. 👍🏾

My favourite bit of this video was where you restored the $1 rusty Japanese knife.....
Ottimo lavoro, complimenti 👍👍👍
Nice video mate. Keep going, you have good videos about restoration 👌
Looks great and you did a wonderful job restoring it!!
Enjoyed your video and I gave it a Thumbs Up
Damn, you're good! 👍
Could you explain is this knife is supposed for left-hand persons?
Single bevel Japanese knives have one seemingly flat side that is really concave, and one side with the bevel. The bevel is meant to cut away from the user, thus the knife in this video is for a right-handed user.
Wow
عمل جيد احسنت👍👍

❤️❤️❤️❤️❤️❤️❤️
It was too beautiful!!! Why didn't you use electrolysis to remove the rust? It's a quick and simple process to do.
Electrolosis isn't that quick. It also causes Hydrogen Embrittlement.
A wire wheel or a couple passes on that belt grinder would've sped things up immensely.
You are creative, your work is beautiful, but you are late in posting videos😁😁
👏👏
Thanks!
What is the solution you put the knife in?
hello, can you give me information or a link to a Japanese store where you bought a knife?
Hi, I bought it from local shop in my city.
How do know if the steel is worth the effort? Can you read the old maker’s mark stamped into the blade? Or are most old knives good steel and it’s only the newer stuff from the 80s 90s that is too cheap/hard/brittle to keep a great edge?

Can you restore milwaukee 2626?
What did the writing on the blade say? Was it a maker's mark? If so, had it been made originally by an artisan or a company?
Yeah, I Would Also Like To know
Why didn't you show us the finished handle instead of just cutting up a bunch of paper? Nice restoration but think a little more about the editing of your video.

Yes get the pits and make the blade thin as paper. You have never seen a butcher test the sharpness of his blade on paper before.
What the hell is this r you crazy to restoration a knife 😥😥😥😥😥
