THE BEST NIGERIAN CORN MOI MOI(EKOKI). HOW TO MAKE EKOKI

Hi! Welcome to my channel. Today's video shows how I make Nigerian Corn pudding (Ekoki). In some parts of Nigeria it is called Ekusu, Nrioka and Corn moi moi.
Apart from boiling corn, roasting it and cooking it, Ekoki or Nigerian corn moi moi is one thing you can make with it. Making Ekoki is similar to making Nigerian beans moi moi.
Normally I prefer my Ekoki a little bit rough, but I blended it smoother because my kids prefer it that way.
Ingredients
Corn 10 cobs
Crayfish 2 tablespoons
Bell peppers 7 small
Habaneros 4
Seasoning cubes 2
Palm oil 1 Cooking spoon
Basil
Salt to taste
Moi moi leaves
The corn should be washed properly before removing from the cob. The moi moi leaves should be properly washed. The water used for blending should not be too much because we do not want it too runny.
Ekoki gets more solid as it cools. I hope you enjoy this Nigerian corn moi moi.
This Nigerian delicacy is delicious and easy to make. If moi moi leaves are not available, tins can be used.
