Keep covered for additional 10 minutes.

I've never seen a more (ig houston) texas dish in my life. Tosted rice + sautéed onion and garlic + tomato chicken bullion + pureed tomato =mexican rice. Add jalapeños & beef, substitute pureed tomato for rotel, and you got TEXAS in a bowl!!
My mom, God bless her soul, passed away just recently but this reminded me of her dirty rice she would make no jalapenos for hers and we added taco mix cheese on top and mixed it up. Woooooo weeee baby I miss ya mom, ain't nobody can cook like you ma!
Awesome. Only change I’d make is to keep the pan empty after the rice and crank the heat, only cooking the beef without anything else there to crisp it up and get it browned deeper, before adding the rest in on a lower heat.
I like it pepper belly is one hell of a name and says it all that is what my dad used to call real cooks who had a belly they back in the day as my dad was born in 35 they used to say you will get a pepper belly eating all them peppers and down south food !!
When i cook minced meat i always make it as a smash burgers an use a press to really push into the pan. Once i have a good crust i scrap it free and try to get a crust on the second side, never as good the first but still better flavour and texture than steamed gray meat. then smash the smash burgers to crumbles.
I’m from south Louisiana where dirty rice originated. I’ve NEVER seen tomatoes of any kind in it. It also has some liver in it, not much. But yours sounds good too.

This is good rice! Reminds me of a tex-mex recipie that my mother usta' cooked for years, only we didn't have the ground beef. For those that can't eat beef, you can substitute par-broiled shredded chicken instead of beef. Do not top with shredded cheese. Top with real bacon crumbles, or you can use, "Bacon Bits" if you're lazy. If you like spicy, top with fresh Pico De Gallo. Just don't drown-it in Tobasco, nor Picante sauce. Serve with hot flour tortillas instead if bread. If you don't know how to warm 'em on the stove top burners, use the microwave. If you're Mexican, and don't know how to warm up flour tortillas on the stove top burners, turn-in your Mexican card.

I've watched several of this man's videos and it always bothers me because he never Sautes the onions! He just throws the meat on top of it before The Onion has a chance to cook. It would also be better if he browned the beef on high heat before adding any liquid.

This is Texas style dirty rice and not Texas style Jambalaya.
To make this more authentically Cajun, you'd use ground chicken livers.
My mother who grew up in the Rio Grand Valley use to make this..She called it Spanish rice.
