I did not have the heart to do this to my Remy Martin. I really wanted to try this so I went to get a cheaper bottle of Meukow 90. I was sceptical on adding Honey but it has changed my life. The honey barely makes it sweeter but complements all of the aeroma from the cognac. Btw I poured less than half of the amount of honey as the video advises. My advice is to at least try it before you judge. Drink it the way you like to and don't let anyone else tell you it is wrong.
The cardinal rule of bourbon drinkers is "you never tell another person how to enjoy their drink". (response to comments below). I find this ways of drinking cognac fascinating and cannot wait to try it. As a side note reading comments about adding honey was very funny, it's amazing how people do not know cognac is just as at home as a mixer, as it is a straight pour. Thank your for taking the time to make this video. -from one traveler to another.
Jeffrey Lee had my first Hennessy XO at a steakhouse in Dallas called Al Bernaits (highly recommend if ever here) and they served it like this (minus the honey). It was good presentation and, from a scientific perspective, makes sense.

Obviously you are at liberty to drink your cognac anyway you want; however, the second that you add honey into it, you have created liqueur. You just made a cocktail. Strictly speaking, it is no longer 'cognac'.
With the amounts added and the high alcohol content this would be debatable. Liqueur has a lower alcohol content and unless your adding flavour to a sugar wash its more complex than adding honey and its definitely not a cocktail which typically involves more than One spirit, example rum and coke is just rum and coke like that's just congac and honey.
@Time Warp An XO Cognac is a rare and expensive drink that should be enjoyed in its own in my opinion. I'm not going to tell anyone how to live their life, but for me mixing an XO is a waste. Btw I tried this with a VS and it was great, I just personally wouldn't waste an XO by neutering the full taste experience.
I like my Hennessy XO neat at room temperature and I use whiskey glasses. To each their own well almost......my best friend drinks xo with ice and coke.....I die a little inside when I see him do this.
I am so glad that my favorite spirit - single malt Scotch - is not associated with all the various gimmick rituals to try to justify the high price. And I say that as someone who likes Cognac and Armagnac.
You have to be kidding yourself there I have seen so many gimmicky rituals applied to scotch. With both liquids you are paying extra just for the name of a region that marketing claims is superior that is a gimmick in it of itself. People buy special water to add to their scotch that they have scientifically measured out and don't forget the people who only drink it on the rocks. Then you also have the boxes that tell you what cigars to pair etc don't tell me that isn't a ritual. Alcohol is marketing no matter what the booze taste like if it is in a beautiful bottle from a region that has a brand name people will buy it champagne scotch cognac it is all just branding and they are masters at it.
Good observations, there, but let's go a tad deeper. 1. Paying "extra just for the name" - unfortunately happens to certain brands, a little cognac-ization of image. Not quite as pervasive as Cognac, though. Certain cognac voices claim that one region of Cognac is superior to another. With Scotch the regions are DIFFERENT and distinct, not superior. It's a "try them all" deal. Some people end up preferring a certain one style. I like them all. I wouldn't call regions a gimmick, though. With Cognac and Armagnac grapes have strong terroir variations, so it's a given. They're different, even every year is different (whether Grand Champagne is superior to other regions may be a matter of taste). With whisky terroir can be composed of grain, yeast, malting and kilning techniques and water source as well as greater variation of casks/oak. 2. Adding water to aged spirits in itself is not a gimmick (and Cognac/Armagnac drinkers should learn it). There is plenty of explanations on that. As to using water from a specific region, that might be geeky, but it may have some merit (unlike warming of cognac). I'd love to see distilleries offering gift packs that include a bottle of their local water used to produce the malt. Only common sense that the mineral content that matches the water used to produce would work well with the malt - may not be noticeable to everyone. I, for one, wouldn't pay extra for it, but would love to try it. This would be a "good" gimmick :) But most serious whisky-philes use good clean water, this is not a pervasive gimmick. 3. People who "only drink it on the rocks" (many a Cognac expression is advertised as being good with ice). I am not one of them but adding ice to a beverage is not a gimmick or a ritual, it cools and dilutes. It's a basic cocktail, that's all. I don't like it but at the same time it's everyone's own preference and taste. If you meant actual stones, again, that's not a ritual, just a device to chill the drink. 4. Pairing of cigars... I don't smoke and it's a niche at best. In fact, the whole thing was invented by the British - smoking cigars with cognac from baloon glasses warmed with a candle, etc. This is a cognac gimmick that crossed over ;) 5. I would not group whisky, cognac and other fine spirits with just generic alcohol and "booze". Best examples of all of the noble spirits come in simple bottles. Some of the better cognacs and armagnacs are sold in very simple rustic bottles with simple labels. The blended blingy-bottle "big name" cognac that is so popular with pimps and rappers is but the tip of the iceberg. There are lots of craft "single" cognacs (single cru, single grape, single vineyard, single barrel, etc.) that are offered at a higher abv, non-chill filtered and without the use of colorants and sweeteners like the mainstream blends. Now, I could point fingers at the likes of Macallan who jump the shark on marketing but Macallan is still a fine malt and is an actual distillery, even if overhyped. It has history and provenance. The "big boys" of Cognac houses are typically négociants , blenders, they are not the ones growing and distilling. They're more like Johnnie Walker. Their product is designed and tailored to the audience. You probably get more information on provenance with JW than you do with the mainstream Cognac blends/brands.
Terrific Andrew. Thank you very much for sharing your experience and the "right method" to enjoy Cognac. I'll have to get my elements ready and definitely try this amazing way. All the best!
I’ve had Cognac served this way a number of times in English country pubs without being asked (without the honey) I think it is a British method for serving cognac in Winter - maybe after a fox hunt or the like. I have not seen it done anywhere else apart from once. In Australia Cognac comes 1 way: with ice. However, I was offered this warmed up version once by a barmaid in Adelaide and when I asked her about it, she told me she had worked in a high end gentleman’s club in London so it may have originated in that kind of environment. Has to be said, it’s a great way to serve and drink cognac. PS keep the bottle from making contact with the glass when you are pouring, it breaks the moment.
I like honey, but I usually use agave for foods like pancakes or waffles, or as a tea sweetener. Should I try using agave with some cheap Hennessey or Meukow? Or should I stick to using honey? I started drinking my tea with agave after I realized it was the main ingredient in añejo tequila, which is absolutely delicious liquor if you buy quality tequila.
If you drink Remy Martin you have never had a good cognac, sorry for saying but you should try Frapin, Montifaud, Landy, Camus XO's, then Remy Martin is cats' piss with those flavours
Cat's piss might be a bit of a stretch, as it certainly isn't a bad liquor. Those varieties are quite lovely and would certainly work well for the recipe.
In my opinion, warming glass with hot steam is not good way because in high temperate not only good ingredient but also bad one vaporize up. So you will feel something rough.
That's probably a splendid drink, but not with a Remy Martin XO. Perhaps with a VSOP, which is a fraction of the XO's price. Oh, in case you missed it, at 4:16, he says that this is how he experienced cognac in a very poor part of Africa. In the US, I've seen African-Americans mix whole milk into fine cognac. Sacrilegious.
