      Fair enough. I was in a concentrated mindset trying the get the interview sorted after a long day of work and touring the area and tasting quite a few cognacs. Now I realize I should have enjoyed the moment (and the Paradis more). One for the cause :-) Cheers Danny, tx for stopping by...

    Classy dialogue, nothing too over-the-top or bourgeoise. A couple gentlemen who truly enjoy the fineness of a good cognac. Comments were not douchey or ridiculous; all modest, down to earth, and everyday. Clicked on this thinking I would be laughing at these guys but am fascinated by their insights.
    Interesting tidbit: only mixology for XO is a TEA ROCK, which are ice cubes made of tea (any kind). Whoa.
    Also, glasses-guy drinks his drinks while other dude spits it out. I like glasses-guy.

    Nice video, thank you for taking the time to put it together. If I could afford it, I'd try other XO's. Any suggestions on how to try before buying a $150+ bottle? Maybe finding a particular bar that carries it but I can't imagine many have a wide selection of XO's on hand. Also, would be curious to see your impression of the Kirkland XO from here in the States. It's only about $50 but have heard very good things about it.

      Hi there, thanks for the kind words. Not sure, as you said, apart from going to several wine bars and trying out several XOs, not entirely sure how you can try a fly of Cognacs from different brands. Or go to Cognac itself? Not easy these days :-( Rémy Martin's is really good. Haven't tried Kirkland's I'm afraid. Sounds like it's very descent indeed for the price. Now of course, XO must be aged for 10 years at least, but most of the top houses add some older Cognacs to the blend to make it more profound, complex, etc. I'm guessing Costco or whoever makes it for them, stick more to younger Cognacs in the blend or they couldn't make it at this price. So it's probably not as deep by any means, but possibly pleasant nonetheless. Guess it depends if you want and would appreciate the 'full' XO experience which pretty exclusive but excellent, or have a feel for it without having to spend all the bucks

      I literally just finished drinking a 720 size bottle of Hennessy from the bottle. Sometimes i like to use the snifter glass and sometimes i drink straight from the bottle.

    Would a bottle of Hennessy XO from 1980 cost more today? If a similar bottle is priced around $300 USD, should a 1980's bottle cost double price?

      I wouldn't think so, unless perhaps you have a collector edition or something. Guess you might find somebody willing to pay more for it because it's old, but Cognac doesn't get better with age, so i wouldn't think it's value would increase. How are you going to find a buyer anyway. Guess put it on ebay and see what happens?

    Very interesting! I wouldn’t put ice in any of them! I know Cognac is the best brandy but I’m awfully fond of Spanish brandy for the price to quality ratio (the only way I’ll ever taste a brandy with a rancio).

      Agreed, I haven't tasted that many Spanish brandies (Brandy de Jerez I assume you're referring to primarily) but when I lived in Spain I remember buying some to have in the cupboard for when needed ;-) they were very affordable and super tasty, so I must agree. Cognacs are pricy!

      Lepanto Gran Reserva is quite good, I suppose it pretends to be an XO equivalent at half the price of a Cognac (in Canada) but it's only a little bit of a bargain, it really doesn't have the complexity and finesse, but as you say, you can taste some old brandy in this solera.

      @@RUclipsJulien Looking at your channel, you have so many reviews of a wide variety of alcoholic beverages, which I like and I'll have to check out :)
      At the moment I get a lot of delight from two bottles I recently purchased: one is a Louis Royer XO Cognac - in my opinion one of the most satisfying XO's, but not really well known and the other is a grappa ,which I don't drink often, but I was quite surprised at how distinctive this one is - Marzadro Giare Legno Grappa d'Amarone.
      This can be sipped, but more often I would drink it like a whisky, on the rocks, with aperitifs and it also works in some to-die-for cocktails, as its potent aromas and saltiness shine through and provide balance when mixed, for example, with Martini riserva bitter + a dry vermouth and a twist of orange/lemon rind.

      Julien Miquel Yes, I’m very much enjoying it. The last time a drank Hennessy was about a month ago and I find it hard to compare it now. I think I like Hennessy better but I will have to do a side by side comparison to really make up my mind. Perhaps I’ll leave some of the Courvoisier and get a bottle of Hennessy and Rémy Martin soon to compare the 3 together....next step will be the XO of the 3 😅 I definitely like Cognac over Whiskey 🥃

    You never drink cognac XO with ice water VSOP a the Vs you could mix it you could do whatever you want with it but the higher quality you drink it straight

    Sorry due to the demand of expensive alcohol throughout the globe , hennessy can no longer cure it's cognac for more than 3hrs, so chances that you bought an xo that was made today is probably 100%

      Robert Eckelman, agreed but on the rocks it’s not for practicality but usually it’s for a more manageable sip plus the notes become more brisk and transparent usually delivering the drinker to a more understood thought of the spirits in the glass 😉

    I dont understand why people are curious about spitting.
    I am not even a taster or pro ... I spit wine and other alcohol drinks .. to clear my mouth from other foul odors .. i will gargle and then spit.

    I’m a little scared for Hennessy. There is no way ice can’t affect the complexity in terms of flavors’ bouquet and palette in general. Etiquette and posh manners are OK but don’t try cheating on chemistry for the sake of marketing.

      Fair enough Vitaliy, I'm sure ice changes the flavor profile of a Cognac, some dilution, temperature change, quite obviously. I think the point Maxime makes is that there is not necessarily one single appropriate way to enjoy a Cognac, even XO and beyond. At the end of the day, my view of it is that making the most of a fine beverage is 1) one to enjoy it yourself as best as you can, isn't that the whole point of it? 2) respecting the beverage by taking some time to enjoy it and perceive its complexity, reflect on what the vines, the distiller, the aging, the blending etc. have added to it to make it what it is, and not just swallow it with your nose pinched. Yet, there is not necessarily one single way of achieving that. Different people have different tastes, and if one enjoys it best with a little ice in it, while he/she doesn't like it straight or wouldn't enjoy it as much if it was warmer and stronger, then i don't see what's so wrong about it!? Also, some people have a lot more money than others to spend on these things. For some a glass of XO or Paradis is a quarter of an hour worth of work, while for others it's half a day of hard labor. Obviously the emphasis on the tasting varies between people depending how much they can afford of it and how often they can have it.

    google tells me that a bottle of the finest Richard Hennessy, was made by the African slaves who worked countless hours, toiling in the sun, blood sweat and tears, dripped down in a bottle, put to age and sells for $4000 to $5000 a pop is the true blend of history.

    The lack of understanding the process of aging & blending is ignorance. XO is a blend of multiple highly aged Hennessy, with one blend from barrels aging over 100 years. I won’t go into details of the exact blend, it’s available online. Paradis have blends similar to XO, but with more exceptional aged barrels over 100 years, “which the price reflects”. Like exceptional aged red wines, these fine cognacs need to air out “helps oxidize the aged blends. Water also helps excel the process. A drop or too is okay, a ice cube would definitely ruin & drown out the 100 year old blends. It’s better to enjoy it the way it is. Trust me, if you were the one dropping the money to purchase these exquisite cognacs, you would savor every drop. Within another 50 plus years, Hennessy supply will be all gone. There’s only so many 100 year old barrels left currently. Do the math, these XO bottles will soon be pricing like the Richards! Get’em while you can, enjoy them with family & friends. Nothing good last forever.
    I’m no cognac connoisseur by any means, just knowledgeable to do some research on the product I’m buying. Cheers

      Jacob Barry you are correct Barry, legally XOs have to be 6 years old min, but Hennessy only uses at least 10 years old eaux de vie in theirs.
      This is what a quick search on Google explains: « XO Cognac: 'Extra Old' XO stands for Extra Old, and it describes a Cognac consisting of eaux-de-vie that have been aged in oak barrels for a minimum of six years. However, XOs often have a much older average age, with many XO Cognacs being 20 years old and older.Apr 9, 2013 »

    Warm it and sip it. The only problem with VSOP and XO is that it is far to expensive. The top of the range are snobbery at its best. Nonetheless, it is a great grape product and a pleasant experience. Downside is that quality is not consistent.

      I've responded on the spitting thing here a few times. Please go and read my other comment responses about this. When you taste alcohol as a professional, as a job, you may find yourself in circumstances when you have to, or prefer to spit. When you're a surgeon, you cut people open, which certainly wouldn't be unacceptable under other circumstances. But I'm afraid context matters in all things. So please accept there is a context here...

    Why not to grind oak wood put with the distiled spirit and boil them in vacum tank

    Why does he use a pair of gloves? There is less grib and he might drop the bottle so it is not a good advice. The best way to serve expensive spirit with elegence is a pipette.

    Anyone who uses cognac for mixed drinks is better off sticking to cheap whiskies.

      Whisky has a very different taste to Cognac though, I wouldn't say they're interchangeable in cocktails unless you're after whatever form of alcohol!?

      Hi Ralph.. This is a strange way to put this question! Why do you spit? Well, not to swallow. Is this new? No, food and beverage professionals who taste things for a living have spit not to swallow for decades. The truth is. Maxime who is a professional on the floor of his workplace here spits during the interview which is understandable. I did too because I taste alcoholic beverages for a living as a wine and spirit commentator, and I didn't feel like drinking these in these circumstances, especially after spending the entire day tasting around different distilleries in Cognac. that's why 😀

      @@llosttprophett thank you Ralph :-) Yes, it is a waste, and I totally see what you're saying. I wouldn't normally do that at home when I'm on leisure-time mode and not working, or recommend it. A huge part of my job as a commentator is to respect the product and I love to highlight all the efforts that go into crafting a fine beverage, the viticulture, the wine growing, the distillation, etc. I like to help people realize fine beverages are a complex craft, which helps appreciating it better. Have you watched my 'inside Hennessy' distillery tour video? At the same time, as you understand, when you work in field, there's things that you do that would be considered wasteful compared to an everyday life behavior of course. Think of crash testing a car for example!
