    Whisky HAS to be destilled at least twice. At the 1st destillation you make Low wine. And the age statement for whisky is not that simple. The youngest whisky added has to be the age statement, so older whisky can always be present. And older age does not mean "better quality". Further more the difference in spelling comes from Ireland. They added an "e" to distinguish their brands from the scottish.

      You might have a preference for whiskey to be distilled more than once. And there may be regional patterns in distillation runs… but nothing in the law or nomenclature requires whiskey to be distilled more than once to be whiskey.
      What you’re referring to is a stripping run. But this is only done for pot-stilled whiskeys. In column-stilled whiskeys, the entire run can be done in one shot.

    Thank you for a well presented video. One additional difference between the two is the source of oak used in the production of the barrels and how they are produced. American bourbon must be aged in only 100% brand new American oak barrels, while French cognac presumably is made in only French oak barrels. I believe cognac producers use predominately new oak but in general winemaking practices it is very rare that wines would be aged in only new barrels.
    The actual toasting process in barrel making is radically different when making Whiskey barrels in an American cooperage versus how all French barrels are produced, whether for wine or spirit production.
    Both of these issues produce eventual aromatic and flavor differences to the two spirits that are admittedly somewhat subtle but also fun to contemplate while enjoying said beverages!!

    I'm from China, I bought a bottle of Johnnie's 15-year-old sherry version some time ago, and I'm sick, I say it's really hard to drink, I'm still more used to brandy in foreign distilled wines

    I usually add Tennessee whiskey and/or spiced rum to my homemade eggnog. I would like to try a brandy and/or a cognac instead. Which cognac is best suited for eggnog?

    great vid.. i have a question... with wine, once u uncork the bottle the wine will start to oxidize and it doesnt last much longer. how about cognac? does the cognac and whisky go bad leaving it on the shelf once its open? sorry for the newbie question.

      Cognac/whiskey do not go bad as long as you store them properly. However, once exposed to harsh conditions like too much heat, air, and sunlight, the spirit will start to degrade, altering the spirit’s flavor and taste.

      @@Wine-tours-france so its safe to say i can open a super rare bottle of cognac and leave it corked on the shelf for as long as i can keep it stored room temp and away from sunlight? :).. there is a expensive bottle of Tesseron that i would love to taste but i do NOT want to finish it to quickly.. probably would only drink on special occassion like a birth of a child or their birthday or their marriage OR most importantly the day of my wedding anniversary.. i gotta add that in or else ill be sleeping on the coach for the rest of time..lol

      I believe she misspoke and meant to say the second distillation turns it into a colorless spirit. She seems to have conflated fermentation and distillation. As she states "distillation takes place when the wine is fermented. Then the second fermentation makes it a colorless concentrate". This clearly isn't true because fermentation and distillation are two very different things.
      With all brandies, the fruit juice is fermented into something similar to wine. This is then distilled in a stripping run (not sure what they call this for cognac), which essentially removes the water, alcohol, and other volatile liquids from the solids and other undesirable things. This is often called low-wine. The low-wine in turn is then distilled once again into brandy.
      The big difference between brandy and whisk(e)y is that brandy is made from fruit, and whisk(e)y is made from grain. For whisky, the starch from grain needs to be converted to sugars before yeast is added. With brandy, the fruit juice, contains sugars instead of starch. Once the yeast converts the sugars into alcohol and die off. It's strained and this is what is distilled.
      Cognac requires double distillation in pot stills. This is similar to how Scotch whisky is done.

      @@Novocalsmtlbeat Brandy is a broad term, and isn't really regulated. The only requirements for being a brandy is to be fermented from the natural sugars in the fruit. You could use store bought grape juice and add yeast, distill it and call it brandy. Cognac, a specific type of brandy, has specific rules that they must follow. That is like what grapes it needs to be made from, from which region those grapes are allowed to be grown. Then twice distilled in copper pot stills. Then aged from oak barrels from specific locations in France. AFAIK, a second fermentation isn't required.

    Perhaps the original comparison should have been whiskey & brandy. The note that cognac must be from Cognac but whiskey can be from anywhere is a bit apples and Granny Smith apples. Brandy and whiskey can both be made anywhere. Respectively, Cognac can only be made in Cognac and, for example, Bourbon can only be made in the USA.

    The aging designation for Cognac is very similar to Tequila aging. There’s Blanco which is not aged at all, Reposado which is aged for 2-12 months, Añejo which is aged for 1-3 years, Extra Añejo which is aged for 3 years or more. And then theres Cristalino which is charcoal filtered after it’s been barrel rested or aged. Another similarity is that both liquors are named after a specific region of their country of origin.

    This was to easy.. Do you realy know about Cognac and Whiskey ? I looks like you just read from wikipedia. Cognac is not typical blend of a variate of grapes, normal the grape ugni blanc is used. The area of cognac is six crus. Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois and Bois ordinairs.( Six crus regions: six unique products ) - ( Grapes from Grande C. need more ageing then example Borderies area. )..
    VS, VSOP, XO and XXO is blends of different years. Another used is Hors d' Age. Exampel Bache Gabrielsen HdA is about 60 years old. A average age of XO is about 15-20 years. At once you put a small amount of 2 years old cognac in the same blend it is then a VS, but still old ;)... You get what you pay. You also get vintages from a special year. My favourites.
    ....
    VS is good for used in food and drinks.
    VSOP is typical used in drinks and some is good just drinking.
    XO/XXO and above is typical for drinking, as long they dont trick you with alot of young parts in the blend.
    Hors d'age Normalt realy old, but you can be tricked ;) Read the price.r
    Napoleon - Betwean VSOP and XO.
    Vintage - Barel from a special year that the BNIC in Cognac as sealed until bottleing.
    And many more....
    I should also mention another terminology that’s often used-that of Fine Champagne. This is not a separate terroir, but rather a Cognac created from a blend of Grande Champagne and Petite Champagne eaux-de-vie. To qualify as Fine Champagne, at least half (50%) of the Cognac must hail from Grande Champagne.
    A tip: Dont by from the biggest producers as Hennessy, Martell and so on. You pay to much just for the bottle and the name. Go for the smaller quality producers: Maxime Trijol, Leyrat, Lheraud, Prunier, Jean Luc Pasquet, Tesseron, Chateau de montifaud, Delamain, Jean Fillioux ...

    I don't believe whiskey is distilled only once. Google ever lies.
    American regulations also have ages built-in to the words that must be printed on the label such as "straight"and "bonded".

      Thx for those comments! The difference we were trying to note between US whiskey and cognac is that cognac must be distilled twice by law. I believe there is no regulation on minimum distilling for whiskey in the US, and that is subjective based on producer preferences and distilling equipment. Regarding the terms you bring up...Straight=distilled bourbon in the same state, aged min 2 years; and Bonded=distilled in the same year in the same distillery, aged 2-20 years...?
      Great points to note, we were using a large brush to go over whiskey vs cognac but this does add to the layer of information on whiskey.

      @@Wine-tours-france I do believe all professionally done whiskeys are all distilled at least twice and most moonshines as well (aka anyone who isn't doing it for the first time). Same concept as the cognac in that there is the stripping run and the spirit run. That is consistent regardless of the equipment used to distill (pot/column/coffey).

      @@Wine-tours-france Its not possible the make whisky by just destilling once. you only reach around 20% alc the first time around, and to make whisky it has to be atleast 40% alc when bottled.

    This is a poorly layer out video. Why don’t you compare Bourbon and brandy? See what I did there?? Cognac is just brandy. Bourbon can only be produced in the USA. You folks don’t know much about whiskey at all
