Classic Madeleines Recipe | A Fluffly French Classic | Cupcake Jemma

- These Buttery French treats are perfect with a cup of coffee and make for a delicious breakfast. The best thing about Madeleines is that the batter can be made in advance and then you are just 7 minutes away from most delicious, warm, soft, light bite size cakes that are fluffy on the inside with a buttery crispy coating. The Madeline pan gives the cases their signature scalloped decoration and if you bake them correctly they will have the classic hump on the other side. It's hard to explain just how great they are but if you need some convincing then, well, Sally ate 16 in one helping haha!
Don't worry if you don't have a Madeleine pan, you can bake them in a regular Cupcake pan instead!

Preheat your oven to 190C (fan assisted)
100g Caster Sugar (or Granulated)
2 Eggs
1.5 tsp Honey
1/2 tsp Vanilla Extract cupcakejemma.com/collections/...
Zest of 1/2 a Lemon
115g Plain Flour (All Purpose)
Pinch of Salt
1/2 heaped tsp Baking Powder
115g Melted and Cooled Unsalted Butter (plus extra for greasing)
Dust the baked Madeleines with Icing Sugar or make this simple Lemon Glaze:
1 tbsp Lemon Juice
3 tbsp Icing Sugar
Cold Water to loosen

Thank you for this lovely, EASY recipe for Madeleines! After watching you fearlessly folding ingredients, I made this recipe after dinner, and baked it in the morning for breakfast like you did. It was really good. It was so good, in fact, that I made it all over again right after breakfast! This time I added a touch of cinnamon to see if I like that addition. I’ve just this minutes made these. They are delicious. I don’t have a madeleine tray but I do have a shallow cupcake tin which I used and they came out perfect. I will be buying the proper tray (under £10 on Amazon FYI 🤪 ) because I think these will be made often. Sally, i can’t stress enough, I think you guys are doing a fantastic job. It can’t be easy for you all at the moment but you make everything so easy to understand . Jemma, give these guys a pay rise!!! 🤣 I’ve been watching your channel for years and have definitely been baking more during Lockdown. I whipped up a batch, this afternoon, (I went with Orange, instead of Lemon) and that delicious looking and smelling Batter, is in my ‘ Fridge chilling now. When my Madeleine Pans arrive, I will be baking them, to have with my Morning Tea...
Just a little update... These Madeleines are OMG so delicious! I baked a quick six of them, as soon as I received my Pan.... I dusted them with Powdered Sugar, and...ate them all, LoL!

Looks amazing! I got a lovely new madeleine pan that makes me want to bake them more often so I was happy to see that this channel posted a recipe for them!
I’ve just finished the batter and it’s resting in the fridge overnight. I made double the batter and added a little adjustment by subbing 30g of flour (15g if recipe not doubled) with ground almond flour to see if that changes the texture or adds that slight nutty almond flavor. Noticed a lot of the korean madeleine recipes had almond flour and I had it in my cupboard so why not? Either way I’m excited!! Thank you ☺️ and

Just found that the recipe I am using comes with 100g flour and 100g butter. I have tried using brown butter to replace melted butter and found the taste even nicer. :)
