Me too, I always thought it was complicated until I learned to cook it myself and then realized it was so easy. Looking back I think the complicated part was finding a way to get some corn tortilla 😊.

I’m from Belize and I love escabeche. I boil my chicken first in seasoning which include, Bay leaves, cloves, all spice, salt and a roasted head of garlic. I save the water for the soup. I then fry or bake the chicken. Prior to frying or baking chicken , I sprinkle season all on it. I use peanut oil for frying, or baste the chicken with butter for baking. To season the soup, in addition to the jalapeños, I also use Naranja agria ( sour orange), 1roasted habanero pepper. When the onion rings are cooked to my satisfaction, I add a dash of dry oregano and black pepper. I remove the head of garlic prior to serving. Some of my family members prefer it with corn tortillas and others prefer it with white rice. One Love!

The food was well prepared and look edible. But how the chicken was prepared is the only difference I noticed.. I preferred it roasted the old fashioned way. But good job..

@@ambrosiovillafranco937 I do my chicken like this but I was told that u bake the chicken whole with butter on it and put the whole chicken in the pot then put your ingredients but am sticking to this and I see some body say about who put garlic in this .I would I put garlic in everything .My brother put so much onion that we call it onion soup and the family knows what we talking about lol.
@@queenofthecoke7812 you have to put garlic spice seed oregano salt boil the chicken with all this ingredients offter the chicken boil gets soft take out the chicken out into another pot in the same water the chicken boil you will put the onion you have cute in tin Rings then you add your jalapeñio pepper and sour Orange jus in the soop then... you left it boils until you see the onion is soft the chicken you Fry it when you sorve the scabeche soop then you add the pice of chicken you like in your soop with some black pepper rice or corn tortillas or flour tortillas

You have to use the pickled jalapenos. It wouldn't be the same without that pickle, hot and sour flavor.
