    6.75qt LE CREUSET DUTCH OVEN: amzn.to/39o1VK7
    -- RECIPE --
    ▪Olive oil
    ▪600g (2 10oz bags) frozen precut mirepoix mix (carrot, onion, celery)
    ▪3g or 1tsp garlic powder
    ▪2g or 1tsp black pepper
    ▪1-2g or 1tsp dried oregano
    ▪75g or 1/4c chicken better than bouillon
    ▪2 900g/32oz boxes chicken stock (1800g/64oz total)
    ▪150g or 1 1/3c orzo (sub frozen rice for GF or even broken down ramen noodles)
    ▪150g or 3-4 large swiss chard leaves, chopped (or other leafy green of choice)
    ▪450g/1lb rotisserie chicken meat (or baked chicken thighs), chopped
    ▪2-3g or 1tsp turmeric
    ▪150g or 1 1/4c frozen peas
    Add generous squeeze of olive oil into a large preheated heavy bottomed pot over high heat followed by mirepoix. Stir and cook for 1-2 mins until thawed and starting to soften.
    Add garlic powder, pepper, and oregano (feel free to eyeball it). Stir and fry for about a minute until fragrant. Stir in chicken bouillon paste. Stir in chicken stock. Add orzo (if subbing for frozen rice wait to add until later). Bring soup to a simmer.
    About 4-5 minutes from when orzo/pasta is done cooking, stir chard/greens. Reduce heat to medium/med-low and cook until greens are tender and orzo is cooked to al dente.
    Stir in turmeric, frozen peas, and chopped chicken just to heat through. If using frozen or pre-cooked rice, add it during this step. Taste for seasoning and adjust with salt if needed. I usually add a large pinch of salt or 2 at this step. Be sure to stir salt in well to dissolve before adding more.
    Garnish with black pepper, a drizzle of olive oil, a squeeze of lemon juice, and fresh dill if you have it.
    IF USING CHICKEN THIGHS:
    Salt boneless, skinless thighs and lay out on a sheet tray. Bake at 450F/230C for 13-15 min.

      @@unclejj509I agree! My go-to chicken soup when I’m sick is Progresso chicken noodle. If I have fresh greens (typically spinach or kale) I’ll doctor up the canned soup. Mixing up some Idahoan instant mashed potatoes and serving the soup over them adds a level of comfort and heartiness.

    As a person who is responsible for probably 99% of the cooking done in my household because my dear partner (god bless her) did not grow up in a family that really cooked and thus never learned herself
    I just came home to her making this soup
    And it’s possibly the most perfect chicken soup I’ve ever had
    Probably better than any I’ve ever made

    Yes, you added lemon juice! I LOVE chicken soup with lemon juice, it's delicious. Also I love this speed scratch thing. Ideally I'd cook everything from scratch, but I'm chronically ill with serious fatigue, so spending hours cooking dinner just isn't possible for me, even on my best days. I would absolutely love to see more speed scratch recipes.

    Whole fam is sick this weekend. Just came back to this video and had most of the ingredients. Grabbed a chicken from the corner store, grabbed some fresh rolls from their bakery, subbed frozen spinach, and had a delicious, healthy, and healing meal in under 20 minutes. Thanks, Bri.     👍🏻 love the idea of Speed Scratch!
    While looking after my dad before he died, every minute was precious so my amateur version of Speed Scratch was to poach a whole chicken, yielding stock for several portions of soup, along with tender chicken for a variety of dishes .. all ready in 10 minutes once the poaching was achieved.
    Another go-to was to make a cabbage soup yielding several portions, each of which could be customised within 10 minutes by fortifying with pre-cooked chicken, frozen fish, beans, diced bacon, or seaweed (wakami or kombu).
    Maintaining variety, the spice of life!

    Love all your videos Brian, but I gotta say I LOVE the idea of Speed Scratch. I do these sorts of things at home too, often! A mix of home made and premade. It's a time saver but also adds really good flavor, texture and everything else to the dishes I make. I'd love to see more of this series!

      There are certain ingredients where it is more than fine to take shortcuts. Buying a pre-roasted red pepper is likely going to be a superior product compared to what many would create at home, for instance. Or just huge time/dish savers like the parcooked rice

      yes, it’s called home cooking. pre made/prepared ingredients have always been a staple of home cooking in general. why are people in these comments acting like this is some new and novel concept

      @@peen2804 Where have they been a staple of home cooking? Certain ingredients sure but we don't use parcooked rice or better than bouillon or other highly processed additives.
      I didn't know you could get frozen pre-chopped mirepoix. That can be a potential time saver in addition to avoiding waste, if you don't need the entire bunch of celery it could be better to buy the pre-cut stuff but it also involves plastic waste.

    I absolutely love learning how to replicate high end restaurant cooking techniques in my kitchen, but more practically as a home cook I'm rarely able to shell out the time it usually takes to do so. The idea of exactly what you said, being short on labor but still wanting a quality product, is incredibly attractive and I would love more videos like this to add to my weekday repertoire!

    Loved the video, Bri! I'd love to see more of these speed scratch videos. As a neurodivergent person with executive dysfunction, it's hard to get myself to cook things even if I love them. But if they're easy and quick without much prep needed, I've found that I can cook more consistently for myself. This speed scratch chicken soup is absolutely going into my repertoire!

    Speed Scratch seems to be exactly the type of recipes I tend to use being just a 2 person household, it's all about finding the best 'almost there' ingredients. I hope you'll do more in this genre, haven't seen the concept explored much on RUclips so far.

    Love this series. Speedscratch is essentially how I cook most days. I don't have the time (or money) to cook from true scratch. Plus, since i live alone it's often easier to cook smaller portions without wasting anything. I can use part of a bag of frozen carrots rather than buying a 3lb bag of fresh that rots in the fridge before I can get to it.

    Hi Brian, this couldn't have come at a more perfect time. My son and I are sick as dogs. I had everything except the frozen miripoix and the rotisserie chicken. I ventured out for those ingredients. Fortunately, I have a great grocery almost within walking distance. After making the soup, we're both feeling better.     I’m new to your channel and this is only the second video I’ve watched, but I definitely want more of them. I’m chronically ill and many days have next to no energy to cook at all. Any recipes that can help cook a healthy meal with much less effort and energy helps us ‘chronic spoonies’ so much! If they’re mostly made from frozen or shelf-stable ingredients so plans can change if we crash/are too ill for a time, even better.

    Made this tonight with a few minor adjustments. I couldn't get the frozen mirepoix in my grocery store, so I used fresh celery, carrots, and onion (7 oz each). Fresh garlic done on a microplane instead of powder. This is hands down my FAVORITE quick chicken soup recipe now. THANK YOU. This is going on my refrigerator "quick fix" attack of recipes.
    The Swiss chard is a particular inspired addition, anyone that sees this DO NOT skip it.

    Love the term speed scratch and I've been doing this for years. I have in my freezer many cooked and non cooked ingredients already chopped and ready to be thrown in a pot of soup. My favorite short cuts in my freezers are: pre chopped garlic, ginger and green scallion. (Your video just gave me idea of making my own frozen mirepoix), cooked potato and white rice.
