Even that tea bag that you are using, which is ‘safe for cooking’ according to the manufacturers. Recommended to sift aromatics out the traditional way, using a metal sifting ladle or similar non-plastic tool. 🙏🏻❤️

I would ditch the bag right off! Saute the veggies first with oil. That brings more flavor than boiling. You can strain them out later. Your chicken is over cooked! After an hour it becomes dry even though its boiled. After you strip off the meat simmer the bones for 24 hrs. This way you get all the healthy collogen out. And dont confuse green onions with shallots!
